I was going to make tacos, but after working for 8 hours and remembering that my kitchen is a disaster... I cooked a frozen pizza instead.

The chicken club pizza from M&M Meatshops.

So good.

Joe and I went out with friends for dinner tonight - in fact they are a couple whom we met 2 years ago here on VJ - she is from the Ukraine. We went to Cracker Barrel for dinner - always a good choice for me because I LOVE their catfish. That is what I had - spicy grilled catfish with carrots, baby lima beans and turnip greens. Joe had the country fried steak with pinto beans (of course), turnip greens and macaroni and cheese. The dinner and the company were both excellent.

I love Cracker Barrel. The restaurants here in Indy are amazing.

We went to Olive Garden for lunch. They have this 8.95 special for which you get unlimited breadsticks, garden salad, pasta and sauce choices. It was delicious... and filling.

I was bored so I made chocolate cupcakes...

I used this recipe.. first time trying it... I made half a recipe and it made about 18 cupcakes

Cola Chocolate Cupcakes Recipe

24 cupcakes

* 1 3/4 cups all-purpose flour

* 2 cups white sugar or brown sugar, packed firmly

* 3/4 cup cocoa, measured,then sifted

* 2 teaspoons baking soda

* 1 teaspoon baking powder

* 1/8 teaspoon salt

* 1 teaspoon vanilla

* 2 eggs

* 1/2 cup oil

* 1 cup strong coffee or cola

* 1 cup buttermilk or yogurt

1. Preheat oven to 350 degrees F.

2. Line two twelve cup muffin tins with cupcake lines.

3. In a large bowl, using a wire whisk, stir together flour, white or brown sugar, cocoa, soda, powder, and salt.

4. Stir in all wet ingredients- vanilla, eggs, oil, and coffee or cola, and buttermilk, to dry mixture, using a large wire whisk, or beat on electric mixer on medium speed for two minutes.

5. Pour into prepared pan.

6. Batter will be thin.

7. Bake for 20-24 minutes or until cupcakes test done.

8. (Cupcakes should be slightly puffed up in centre and spring back when touched).

9. Freeze frosted or unfrosted.

10. Makes 18 to 24 (medium).

11. Recipe can be doubled or tripled.

Mike made this delicious grilled zucchini today and he brushed it with olive oil and finished it off with chopped mint leaves - it was really good and so simple! We also had brown rice with that.

Hmmm when I think of American food.... Pizza, burgers, hot dogs, fries, roast beef, steak, turkey.

I only see burgers and fries as american. The rest are from various european countries afaik. I guess it has more to do with perception than where it was actually from.
