I am making salsa chicken.. I am using chicken thighs.. just throw them in the crock pot along with your favourite salsa and let it cook.. you could also do this in the oven

or you could use chicken breast and add some corn and beans and make a filling for tacos etc...

I made pork chops smothered with sauerkraut and then baked in the oven. I was going to do stir-fried yellow squash, onions and peppers and mashed potatoes to go along with them, but there was a little - ok, a big - kerfluffle on VJ that needed a moderator and I ran out of time. So, I did instant mashed potatoes with cheese and sliced tomatoes to go with the pork chops and sauerkraut instead. We had dark chocolate covered frozen strawberry fruit bars (from Aldi's) for dessert - yum!

Darn VJ for ruining your dinner menu :lol:

Hubby and I had ceasar salad and pasta with a meat, zucchini and mushroom sauce. Declan, who normally is a good eater, decided all he wanted was cheese and milk for dinner.

Ohmygosh, I wish he was my friend too! I use fresh basil all the time. One of my favourite recipes is to chop about a cup of it, along with a cup of chopped fresh Italian parsley, cup of sliced mushrooms, some radicchio, and some romaine. (It sounds like a lot but, trust me.... it's not.) Then you shave lots and lots of fresh parmesan reggiano into it. Then you make a balsamic dressing and mix that in. OMG, heaven. :luv:

Last night we had leftovers. Tonight I am thinking maybe spaghetti.
