What's For Dinner - Part Deux

We had Thai food tonight. Got a bunch of appys: calamari, steamed shrimp and crab dumplings, roti with yellow curry. The owner has also just started making some sushi ... so we had a California roll. Also had tom kha soup. My 15 month old cracks me up with all the things he eats. Our friends are the owners, so we prevailed upon them to make a kid size dish of chicken and veggie. So Declan had that, but then started grabbing at the stuff we were eating, so I let him try everything. He adored the calamari and actually ate most of it as well as the soup. Surprised me, because I didn't think cocunut lime flavor would be high on a toddler's list.

I made chicken pot pie with all the vegetables from the garden, left over chicken from last night and a can of corn. I made the top crust by using the buttermilk biscuits that you can buy as dough and then just bake on your own. It was very good and we have left overs for tomorrow.

Wow. That's a really great idea, Kathryn. I'm going to try that some day.

Last night we had Thai food too! Only I made it myself. Chicken, ginger, bokchoy, peppers, lemongrass, fresh lime juice, coconut milk, blah blah blah. Had it with jasmine rice. I had made Paula Deen's Southwest Georgia Pound Cake on Thursday but it was #######. It tasted more like cake than pound cake, so we were both very disappointed. I decided to convert it into an English trifle so I sliced it up, poured Harvey's Bristol Cream Sherry all over it, sliced up some strawberries on top, poured custard on top of that, then topped it with fresh whipped cream and slivered almonds. I only had whole raw almonds so I just roughly chopped them. It was yummeh!

Tonight we have tons of leftovers, but I have a feeling my husband's not going to be very happy if I make him eat those. Oh well.

a bit of a long story to lead up to what we had for dinner . . .

ever have one of these days?

Me (about 1:30) Sweetheart, if you like, we could maybe go for a drive and get an ice cream cone - we have those 2 for 1 coupons from Bruesters.

Joe: Hmmm (working on his computer) What?

Me: Ice cream. We have those coupons. If you like we could go for a drive and get some ice cream.

Joe: (something inaudible said to the computer).

2 1/2 hours later . .

Joe: I thought we were going for ice cream.

Me: Do you want to go?

Joe: You said something about going for ice cream and I said I did. But we haven't gone. It's ok if you've changed your mind, but you did say we were going for ice cream . . .

Me: I thought you were busy.

Joe: (long pause) I was . . .

Me: So do you still want to go?

Joe: Do you want to go?

Me: Sure, I wouldn't mind. I just need a minute to get ready.

Joe: Ok

So, I do what I need to do to get ready and come back with my purse and shoes and he is still sitting there in his undershirt in front of the computer. He sees me, gets up and goes to get ready. 5 minutes later we leave.

We have medium waffle cones - really yum - and sit there in the shady park area beside the store eating the cones. Then we drive home. He says, 'So, do you want to get some take out dinner to take home?". I said,"sure, what did you have in mind" knowing that the way we are going home we only have a choice of Mexican or Caribbean . . . so that is how we came to have Caribbean Take-out for dinner :) .

We both had Ropa Vieja (shredded beef mixed with peppers in a spicy sauce) with fried plantains, yellow rice, salad and Cuban bread, and we picked up an order of croquettas Jamon (ground ham with spices rolled in flour and fried) for an appetizer. It was all very good - and of course we have enough left over for lunch tomorrow. We did it backwards tonight having dessert first. And yes, I'm stuffed.

Kathryn, that's funny! That's sounds like such a fun evening.

My husband needs a hamburger at least once a week, it's a must in his diet. So we are having the mandatory hamburgers tonight with mashed potatoes (I boiled them with onion and garlic for extra flavour) and with asparagus - found this recipe: salt asparagus and sprinkle with lemon juice and cover with butter. Microwave for 3 min, then turn over and microwave for another 3 min on high.

We had leftovers for dinner. Without any argument from my husband! I was shocked. LOL

Tonight we are having mesquite bbq'd pork tenderloin. I brought back a few packages of Clubhouse La Grille Mesquite marinade from Canada. It's really yummy. So I'm going to marinate the pork in that for a few hours and make a corn casserole to go with it. Not too sure what I'll make for a veg. Maybe a Greek salad or something.

Mmm.. Cuban food. :x Makes me miss home so much more - and my Gramma for cookin' it! My aunt made me ropa vieja for my birthday (I'm half-Cuban :D). It was delicious.

They make theirs in a spicy sauce? Weird. Cuban ropa vieja isn't spicy.

We're making sushi at home tonight - first time. Gonna make california rolls and kappa rolls.

We just got home from an adventurous running around day. Went to a local spot to feed ducks and hike a bit (kid friendly hiking, that is). Declan adored it and pretty much swam in the pond himself. Then we headed to the outlets so I could find a dress for a wedding I am attending next week. It took forever to find a dress, mostly because the majority of styles were sleeveless and I am not a sleeveless fan. I did end up buying a sleeveless one though because it made my boobs looks amazing, so now I need to just find a wrap or something.

Okay, none of that had to do with food, but did explain why we just got home. We just had premade stuffed chicken breasts. Not wonderful, but not too bad either.
