I am so proud of myself this week. When I went grocery shopping on Sunday, I planned out a whole weeks worth of menus and so far, am actually sticking to them (granted it is only Tuesday). Tonight is marinated turkey breast and veggies (zucchini, yellow squash, eggplant) on the grill.

Ok, the pantry yielded some Habitant bean with ham soup that Dad brought down on his last visit, as well as some corned beef. So we are having soup and corned beef sandwiches with sliced garden-fresh tomatoes.

This is about lunch - but it seems ok to post it here lol

So I was making tuna salad sandwiches and i grab a can of 'chicken of the sea' out of the cupboard and I say - this tuna is like U.S. tuna, it's all mushy and there is not enough tuna in this can for 2 sandwiches!! It's garbage!

I didn't realize that it was a can of tuna we had brought with us

The cat seemed to think it was ok.

I am so chuckling about that can of tuna - exactly!! I actually weighed the can once after I had opened it and drained off all the fluid - a six oz can of tuna yielded 2 oz of meat. It makes one sandwich.

and I love Habitant soups as well. I was really yearning for some Habitant pea soup so I asked Dad to bring some down with him when he came for a visit last spring. He brought me 6 large cans - 3 of the pea soup and 3 of the bean and ham. Yum! Joe really likes them as well.

I am having a really bad hankering for DQ for some reason.....I usually only have DQ for blizzards and ice cream. I really want to try their chicken wrap, but for some reason a cheeseburger sounds more appealing. *drools*

Well the Chicken of the Sea can we had - that was 6 oz probably - as Kathryn mentioned. A can of Canadian tuna is generally 6 ozs as well, but there was probably (at a guess) 4.5 to 5 ozs or so after draining off the water.

Canned tuna is so low in calories, sometimes I will have a whole can on a sandwich!

I roasted a turkey breast yesterday. It was about 5 lbs. It was quite good! Because it wasn't the whole turkey I had nothing to put the dressing in. So, I made some along side. It was horrible! Ick! It was too "wet". I put some chicken stock in it as I thought it would dry out not being inside the turkey, and that was a wrong move. Oh well. I steamed the carrots and then quick fry them with some butter and sugar-free maple syrup flavoured liquid. (Can't call it syrup, because it's not! ) Tonight we'll finish up the beef brisket, maybe with some sweet potato fries for Gene.

I always do the extra stuffing at the end in a covered casserole. Whatever is leftover that doesn't fit in the bird so I assume I could just make a random batch and do it all in a casserole. . probably about 40 minutes on 350 or 375. Covering is probably the key to not needed extra liquid...turns out nice and puffed up and done all the way through

I think that might be the key Udella, covering it up and not adding that extra liquid. Thanks!

I'm so proud of you too! It does make it easier to shop and plan meals. It also saves you money.

Last night we had leftovers of beef brisket. Made a fresh tomato, onion, basil, feta salad. Also some cheese rotini to go with it. Now, I still have over a half turkey breast left, and I'm going to try to come up with something for that leftover!

We had seafood linguini and bruschetta with cheese. I am not quite sure what we'll have this evening. Maybe chicken pot pie with broccoli.

Last night was steak - filet mignon from Price Club.. and salad, both quite good.

My daughter made the recipe for a custardy rice pudding off the side of the Minute Rice box and that was pretty good too.

making a new Weight Watcher's casserole this evening so we'll see how that goes

We are going to have T-bone steaks tonight, wish I had a BBQ to cook them on - but no matter, they will be good regardless. I have 1 yam left, so I will cook that as well and i'm not sure what else I will make - maybe corn.
