Beano - nuff said (yes, it really works)

Red Chicken Chili Recipe

* 2 teaspoons olive oil

* 3 cups chopped onions

* 1/4 cup chili powder

* 1 1/2 teaspoons dried oregano

* 1 1/2 teaspoons ground cumin

* 3/4 teaspoon salt

* 3 garlic cloves, minced

* 3 cups chicken stock

* 1 (16 ounce) can kidney beans, drained

* 1 (14 1/2 ounce) can whole tomatoes, undrained and chopped

* 3 cups diced cooked chicken

* 1/2 cup shredded extra-sharp low-fat cheddar cheese

* 1/2 cup low-fat sour cream

1. Add the oil to a large pot; heat oil over medium-high heat.

2. Add in onion; stir/saute 5 minutes.

3. Add chili powder and the next 4 incredients; stir/saute for 30 seconds.

4. Add in the chicken stock, beans, and tomatoes; bring to a boil.

5. Lower heat to medium-low; simmer for 30 minutes.

6. Add in the chicken; stir to mix; simmer for 15 minutes.

7. Ladle chili into individual soup bowls; top with cheese and sour cream.

I am pretty sure this is the recipe :P.. what I usually do though is just throw everything into the crock-pot, even the raw chicken and cook it in there for a few hours. I think I saute the onion and garlic a little bit though before adding it to the crock-pot... also I use a can of diced italian tomatoes, the ones that are flavoured with basil, oregano, garlic etc.. I also add a dash of paprika and red pepper to kick it up a notch.. you could also add some bell pepper and or some corn too if you wanted.. I usually leave out the kidney beans because David doesn't like eating beans if he has to work the next day :P

Okay, I modified it (just can't help myself) from the original recipe so this more about what I did rather than what they tell you to do. :lol:

NO-ROLL PIZZA DOUGH

This version makes two personal-size pizzas. I just put the finished product into two sturdy pie tins and carried on from there. You can do this by hand, or with a mixer. I did it by hand because my Kitchen Aid mixer was destroyed in one of my moves. :angry:

1.5 cups all-purpose flour

6.5 ounces water, room temperature

1 teaspoon kosher salt

1 packet instant dried yeast

1/4 teaspoon sugar

olive oil

  • Mix flour, water, and salt in mixer fitted with dough hook on low speed for 3-4 minutes.
  • Let dough rest for 15-20 minutes.
  • Coat a medium to large bowl with a good deal of olive oil.... I used a couple of tablespoons.
  • Sprinkle yeast and sugar over dough. Knead on low speed until fully combined, 1-2 minutes. Increase mixer speed to high and knead until dough is glossy, smooth, and pulls away from sides of bowl, 6-10 minutes. (Obviously I did not do it for this long by hand and it still turned out great.)
  • Pour dough into greased bowl. It will be really really sticky - but this is fine - so try to resist the temptation to add more flour. Make sure the top of the dough is coated with oil also.
  • You're supposed to cover it with plastic wrap at this point but I didn't bother.
  • Let dough rise at room temperature until nearly tripled in volume and large bubbles have formed... about 2-2.5 hours. I put the bowl in the microwave (don't turn it on!) and it was ready for the next step about 1.5-2 hours later.
  • Heat the oven to 500 degrees.
  • Coat two pie tins or one small baking sheet with 1-2 tablespoons of oil.
  • Pour in the dough, including the oil it's been sitting in.
  • Using your fingertips, press dough out toward the edges of the pan. If it resists stretching, let it relax for 5 minutes before trying to stretch again.
  • Let dough rest in pan until slightly bubbly, 5-10 minutes.
  • Using fork, poke surface of dough all over, then bake in oven for 10-15 minutes, until slightly brown.
  • Remove from oven and turn heat down to 450.
  • Add your toppings, then return to oven and continue to bake until cheese begins to brown, about 5-10 minutes.

Ribs last night turned out so good .. but so ticked off cause i spent all those hours getting them ready and my wife just kept telling everyone around to try them i barley got any .. like half of a rib ( i didn't cook for hours to feed all the neighbors) i didn't even touch the rest of the stuff that was prepared i went to subway to get a sub .. she felt really bad after that .... hopefully she don't give my roast away tonight hahaha
