Anyway, we are having yams, green beans and pork chops!

Turkey sausages, I put the pork chops in the freezer!

oven roasted 'barbeque' spareribs with fresh sliced tomatoes, and a stirfry of garlic, onions, yellow squash, okra and peppers. There's enough left over for Joe to have tomorrow for lunch as well.

I roasted a turkey breast yesterday. It was about 5 lbs. It was quite good! Because it wasn't the whole turkey I had nothing to put the dressing in. So, I made some along side. It was horrible! Ick! It was too "wet". I put some chicken stock in it as I thought it would dry out not being inside the turkey, and that was a wrong move. Oh well. I steamed the carrots and then quick fry them with some butter and sugar-free maple syrup flavoured liquid. (Can't call it syrup, because it's not! :lol: ) Tonight we'll finish up the beef brisket, maybe with some sweet potato fries for Gene.

Last night dinner ended up being linguini with clam sauce .... very good.

Mmmm. That sounds like it's going to be MY dinner. :lol:

We had our turkey slices in gravy with GREEN BEANS last night. Only my husband wanted rice instead of potatoes so I used up the last of my Canadian rices..... brown basmati and wild rice. It was yummeh.

I keep thinking I"m going to make meatloaf but seafood linguini sounds really good now. LOL

I always do the extra stuffing at the end in a covered casserole. Whatever is leftover that doesn't fit in the bird so I assume I could just make a random batch and do it all in a casserole. . probably about 40 minutes on 350 or 375. Covering is probably the key to not needed extra liquid...turns out nice and puffed up and done all the way through

Lucky we weren't over for dinner last night isn't ittttttt! I would have had to push my green beans around my plate! I did eat 3 or 4 because I thought I should - then I thought - yeah, I don't have to :lol:

No idea what is for dinner tonight. The yams last night were particularily delicious.

so that tamale pie yesterday was yummy.. the recipe I use calls for fiesta beef soup and I never can find it so I just use vegetable beef soup...

so yesterday I was curious where I could find this fiesta beef soup so I did a online search and found out that Campbell's discontinued the soup a few years back.. so I guess that is why I couldn't find it :P
