What's For Dinner - Part Deux

Last night we went to a very small family operated Nicaraguan restaurant. What a delight! I had the carne asada. It is thinly sliced beef that had a lovely marinade of vinegar, peppers, spices, and then grilled. It came with rice and beans with an achiota sauce. Crisp fried green plantain topped with a vinigarette coleslaw accompanied. Yummy! The owners were so happy we enjoyed our meal. The presentation was lovely.

Tonight I'm making smoked sausage and perogies.

Tonight I am going to make the roast beef I talked about making yesterday! Just with some potatoes and carrots and I might make yorkshire pudding if I feel like it - then again maybe not, since we have a baguette.

so like I mentioned the ribs last night were the yummiest ribs I have ever had... even the hubby was making sure he got all the meat off the bones

so today I went back and got two more packs to throw in the freezer for a latter date.. but now I wish I would have bought a few more ...

the brand is Plumrose Baby Back Ribs

Meatloaf..... I had never had it before moving here. Now I'm hooked!

we love meatloaf...

I usually topped my meatloaf with a mixture of brown sugar, dry mustard and ketchup but recently I found this new recipe and it is a mixture of apple cider vinegar, ketchup and brown sugar.. mmmmm delicious!

We stopped at Panera Bread for lunch (Yay - haven't been to one since I was last in one in Michigan 7 years ago) as it was just down the street from the Atlanta USCIS building. Joe had never been before and he really enjoyed his Greek Salad. I had a mediteranean veggie sandwich on tomato asagio bread - wonderful. Anyway, they had really good looking freshly baked bagels so we bought some home. For dinner Joe had an everything bagel with onions, tomatoes and mozzarella cheese on it toasted in the oven and I had a whole grain bagel with tomatoes, peppers and cheese also toasted in the oven - then my left over chocolate croissant from lunch for dessert. I really wish they had a Panera Bread closer to us than Midtown Atlanta. Joe was quite impressed - and he didn't want to be, hehehe. He started out trying to find problems with them and ended up enjoying it.

We have what started out as the original "Panera" which is the St. Louis Bread Company. I love it there, and LOVE their creamy tomato soup.l We have about...hmmm 20 locations near me. We always get the "pick two" for lunch, or supper even sometimes. The greek salad is my favourite salad, with the tomato soup.

Last night we had smoked sausage, green beans and perogies. Tonight I have no idea. I'm going to Costco today for coffee, so I'm sure I can find something to buy for supper.

Well, I haven't even seen my Mom since we got back to Calgary - which has been a week by the way! Have just been too tired for going out visiting and busy too - and she does not visit - basically unless you go to her or take her out, you aren't going to see her

Might do that today - but if not, perogies are on the menu - with what else - I do not know.

Perogies are so good! They're like a potato pasta, shaped like a half moon and stuffed with different goodies like cheese, onion, bacon, etc. They are a Polish dish originally but have become quite popular in North America! And you can fry or boil them and serve with sour cream
