I sauteed some tomatoes and threw that along with a can of diced tomatoes into the blender (the hubby doesn't like chunks of tomato in his sauce :P).... then I fried up some ground beef, onion, bell pepper and zucchini and then added the tomato mixture along with some spices...

does anybody else use those Lipton cold brew tea bags? I love them.. no messing around with boiling water..

2 bags makes about 2L/2QT.. then I add about 3/4 cups sugar and 1/8 to 1/4 cup lemon juice... mmmm.. so good on a hot day!!

Last night we had grilled chicken that I marinated in soy and lime juice. It was alright, but not the greatest. Had brussel sprouts and noodles with that. Tonight we're having a leftover ground beef casserole I made the night before.

I did make the spaghetti - at like 9:00!

We have not really gone grocery shopping yet, just a quick trip to the store. I believe the dinner selections tonight are like a frozen dinner or some smokies and potatoes :lol:

I actually want to go shopping but I have been busy unpacking and Mike has gone to a different store every day to get stuff we need - just your basic household stuff like detergent and a fan (where is my central airconditioning??)

I know it's been a cavalcade of food from restaurants and take out - but I think I really need some chinese food. I also need a falafel donair.

Had a falafel donair for lunch - very good, but not quite enough sauce. I think for dinner we will have potatoes, we don't have any meat yet and at least potatoes are 'normal' :lol:

sgetti and homemade tomato meat sauce

:thumbs:

I'm going to make spaghetti too!

You are so funny trailmix!! I was reading what you wrote in the first quote, and you said you were going to make potatoes for supper. Now I know you've done that before...had like one non-meat item. I think that's so awesome. :lol: Then, after that, you said you were going to make speghetti? :lol: You're too funny!

so I think I am going to make this along with the ravioli...

Solo Baked Chicken Breast Recipe

* 1 boneless skinless chicken breast, thawed

* 1 lemon, juice of

* 1 tablespoon melted butter

* pepper

1. Place a Cast Iron Frying Pan into an oven and preheat at 350 degrees for 10 minutes.

2. During this time, IF the chicken breast is frozen, it can thawed in a microwave at power 3 for 7 minutes.

3. Place the thawed chicken breast into a shallow dish and add the juice of 1 lemon, coating both sides.

4. Let sit for at least 5 minutes.

5. Cover both sides with pepper, and then coat the chicken breast with the butter, using a brush.

6. Place the chicken into the Cast Iron Pan and bake for 35 minutes.

7. To get an even browning, turn the chicken over half way through the baking time.

Well, I made a variation on another vegetable moussaka last night and we had the left overs tonight with diced tomatoes and cucumber salad (from the garden). Autumnchik, I can send you some leftovers if you like - but they may not be edible by the time they get there.

“...Isn't it splendid to think of all the things there are to find out about? It just makes me feel glad to be alive--it's such an interesting world. It wouldn't be half so interesting if we knew all about everything, would it? There'd be no scope for imagination then, would there?”
