What's For Dinner - Part Deux

We ended up having that Asian chicken salad last night. I had just had some toast up until supper, so was a little hungry by suppertime. My tummy seemed to handle the salad fairly well, then I had some popcorn during the evening, and it didn't feel so well. Took some Tums and slept fine though. Think we'll finish up the salad for tonight with some rustic olive bread I bought on the weekend.

I did buy some Yoplait Whips! the other day. My...my...MY they're good! I put one in the freezer as a cool treat some evening. I had the raspberry mouse and put the orange cream in the freezer.

Guess we are the only ones having dinner tonight Carla!

We are in Swift Current, Saskatchewan. Can't say i'm crazy about Swift Current, but - then again I am really tired. This little town is so over priced, I guess they are ripping people off because it is a town a lot of people probably stop at. For instance, we just went to A&W and a chubby chicken combo was over $10!

Anyway, I just had a burger and a drink (the person didn't put the lid on my drink correctly and I got it on my clothes) - but anyway, we had Humptys earlier - it was so-so.

*Waves* You must have passed through Regina earlier in the day tmix! Speedy Creek as my family calls it, yeah there is nothing there, overpriced for sure! Safe travels to Calgary!

I really want to try those Whips. I love the concept!

We had tempura fried soft shell crabs and pancit (filipino noodles) for my sister-in-law's birthday today. She turned 18! Eating noodles on your birthday is a filipino tradition meant to bring good luck and a long life!

makes note to self . . . don't keep the jalapeno peppers in the same bowl with the miniature sweet peppers . . .

Ok, tonight I did a mix of stirfried garlic, onions, what I thought were all sweet peppers, zucchini, yellow squash, hominey, green chilies and tomatoes. When I tasted it I realized that some of those 'sweet' peppers were probably jalapeno peppers and the mxiture has quite a sinus clearing bite to it. Not so hot that we won't be able to eat it, but very reminiscent of some Indian cuisine. Good thing Joe likes hot food!

yeah kind of weird making pie at this time of the day but I remembered I had some nectarines that were going a little soft that I wanted to use before they went bad...

I use a combination of a few different recipes for my pie...

for the crust I use this one....

Easy As Pie No Roll Pie Crust

1 9inch pie crust

* 1 1/2 cups flour

* 1 teaspoon salt

* 2 tablespoons sugar

* 1/2 cup oil *

* 2 tablespoons cold milk

1. Sift together flour, salt and sugar right into pie plate.

2. Beat together oil and milk and pour over the flour mixture.

3. Quickly mix with a fork just enough to moisten flour.

4. Press into pie plate, ####### all over with a fork and bake at 425° for 15 minutes.

*i keep meaning to try the recipe with a combo of oil and butter or just butter or maybe shortening... my hubby seems to like it fine though with just the oil...

I always had a heck of a time with the filling.. I found a recipe I liked but hubby didn't like it because it had too many apples and not enough filling.. you know when you buy canned filling, it comes with that gel type stuff.. well, that is my hubby's favourite part of the pie :P

so anyways I finally found a recipe that works for both of us...

Apple Pie Filling

# 2/3 cup sugar

# 3 tablespoons cornstarch

# 1 1/4 cups water

# 3 cups tart apples, peeled and sliced

# 1 teaspoon vanilla extract

Combine sugar, cornstarch and water in a saucepan until smooth, bring to a boil. Cook and stir for 1 minute or until thickened. Remove from heat and stir in apples and vanilla.

and then I just top the pie with a crumb topping... this is the one I used today...

Oatmeal Crumb Topping for Pies

* 1/2 cup butter

* 1 cup brown sugar

* 3/4 cup flour

* 3/4 cup oatmeal (any type but instant)

* 1/2 teaspoon cinnamon

* 1/4 teaspoon salt

1. In a large mixing bowl combine all the ingredients except the butter.

2. Cut butter into mixture with a pastry blender until mixture resembles coarse bread crumbs.

3. Spread crumbs over prepared fruit mixture of your favorite fruit pie.

4. Do NOT add top crust.

5. Bake as directed in your fruit pie recipe.

6. If crumbs become too dark while baking, cover loosely with foil, but remove foil the last few minutes of bakings so the topping will crisp.

7. Note: when using this topping there is no need to dot the fruit with butter, if your recipe calls for that.

*Half of this recipe is plenty for a 9 inch pie. It also comes out more like sticky crumbs..

Put a mat down on the lino!

So we ordered the pizza, it was very good, it did take me approximately 15 minutes and being passed from the first person to the next to explain that I had a gift certificate.

Anyhoo - we just had lunch and we had some some Armstrong aged cheese and omg it is so good - I really missed it!

We also had this lame campbells soup - it was like tuscan meatball blah blah blah and it looked great and tasted like nothing - but the cheese was - again - spectacular!!

Oh and so was the multi grain bread - omg the food here is so much better - be it the sans HFCS - or the altitude or whatever. Canada beats the U.S. in food - hands down no question. When we crossed the border we stopped at a gas station and I bought a coke - I think I teared up a little bit :lol:
