Tonight I'm making beef taco skillet - this is SO good!

1 lb. ground beef (or substitute 1 package of soy crumbles as I do for a healthier veg option)

1 can Campbell's Tomato soup (reduced sodium)

1/2 cup salsa

1/2 cup water

6 flour tortillas cut into 1 inch pieces

Cook beef until well browned, pour off fat.

stir in soup, salsa, water, tortillas. Heat to a boil. Reduce heat to low and cook for 5 min. Stir and top with cheese.

I also add corn, onions and peppers.

I have that recipie it looks good

I'm trying to figure out what food I should try and ovoid eating from now on, I have lots of food allergies, and its effecting me in weird ways. Like weight gain, fatigue, head aches ect.... but i'm allergic to so many things I don't know where to start. I'm thinking milk products starting with one thing at a time.

I'm told not to stop all the foods at once since my body can go into shock, seems my body craves the stuff i'm allergic too, it gives me a high when I eat it so too much restriction is bad. Oh well back to looking at recipies for foods I can't have hehe

Another big stir fry tonight with zucchini, yellow squash, peppers, okra, vidalia onions, garlic, and potatoes, served with sliced cold ham, and sliced cucumbers and tomatoes.

While we have been making big indentations into the zucchini (although it is still winning the race), the eggplants are starting to come fast and furious, so tomorrow night will be moussaka -and I'll probably slip some zucchini in there as well!

Our garden is s-l-o-w-l-y producing a bit of corn here, a few yellow squash there and I do think we have a bell pepper growing! Woo Hoo! And some sort of melon...can't wait to see what THIS is! The peas didn't do so well but it was a learning thing for us.

Supper...just a concoction we came up with five years ago...one that is "our dish" because it's the first thing we cooked together when we first met. :wub:

Mike and I went into Philadelphia's Chinatown this evening to have dinner at a yummy noodle house, then we searched high and low looking for bubble tea and we finally found it in the midtown village at this place called the tbar and it was SOO yummy.

Its a combination of tea, milk (usually condensed milk) and you can get it in a variety of flavours. It has "pearls" in it which are made from tapioca and its just fun to drink. You suck up the drink through a thick straw and get the tapioca too...

I took a picture of mine tonight see:

It was honeydew flavoured and sooo good.

We have a bubble tea place very close to our house. I was actually going to go there to pick us up lunch today- they make great spring rolls (fresh salad rolls is what I was used to calling them in Canada) and good stir fry. I like bubble tea but don't get it that often- Mango is my favorite.

Oh- and today I made 'Grilled Tuna Rolls' I saw it today on Barefoot Contessa and it looked good. Mel loved it! I wasn't so sure about putting it on a bun, I ended up taking it out and just putting it in the lettuce.

Grilled Tuna Rolls

Ingredients

• Good olive oil

• 1 pound very fresh tuna steak, 1-inch thick

• Kosher salt and freshly ground black pepper

• 1 lime, zest grated

• 3 tablespoons freshly squeezed lime juice (2 limes)

• 1/2 teaspoon wasabi powder

• 1 teaspoon soy sauce

• 5 dashes hot sauce (recommended: Tabasco)

• 1 firm, ripe Hass avocado, medium-diced

• 1/4 red onion, chopped

• 1 tablespoon minced scallion, white and green parts

• 1 tablespoon toasted sesame seeds

• 9 hot dog rolls, grilled or toasted

• 1 bunch baby arugula, washed and spun dry

Directions

Heat a charcoal grill with hot coals. Brush the grill with oil.

Brush both sides of the tuna with olive oil and sprinkle generously with salt and pepper. Cook the tuna over the hot coals for about 2 1/2 minutes on each side. Remove to a plate. The tuna should be seared on the outside and raw inside. Allow to cool and cut into cubes.

(If you don't want to heat a grill, you can sear the tuna in a dry saute pan over high heat. Heat the pan for 2 minutes, add the tuna steaks and cook for 1 1/2 to 2 minutes on each side until seared on the outside and still raw inside.)

For the dressing, whisk together 2 tablespoons of olive oil, the lime zest, lime juice, wasabi powder, soy sauce, hot sauce, 2 teaspoons kosher salt, and 1 teaspoon pepper in a small bowl. Toss the avocado in the dressing and then add the tuna, red onion, scallion, and sesame seeds. Line the rolls with arugula leaves, fill with the tuna mixture, and serve.

LOL. Love yours too! I get a little homesick for Quebec sometimes- last time I visited was about 13 years ago. I miss the winter carnival and I really miss the Cabane a Sucre. That smell when you walked in- nothing smells better to me than that.
