What's For Dinner - Part Deux

Left overs tonight meatloaf wotyh suated Walla Walla Sweet onions, mushrooms, and garlic brown gravy, mashed potatos, corn, and peas. No dessert, I made peach cobbler last week, but I really need help with my pie crust here in the states. The lard isn't like Tender leaf, it mixes weirdly with the all-purpose flour. I have only ever made lard and flour pie crust and I am lost as to what do do to make a decent pie crust now. HELP!

Hmmm, have you used Crisco? Perhaps the lard you're using was old? I don't know that I've had a problem with Crisco here and mixing with the flour. I always put a tablespoon on vinegar in my pie pastry, is that what's missing? Have you tried shortening before or are you strictly a lard person? Here is a butter only recipe if you're not liking the lard. I personally don't like it.

1/2 teaspoon salt

1/3 cup cold water

1/2 pound (2 sticks) cold unsalted butter, cut into 1/2-inch cubes

11 ounces (about 2 cups) all-purpose flour

Have you ever tried an oil pastry crust? I've tried that a few times and it was good. A little different, but certainly not as good as lard. Many people as well just use those rolled out Pillsbury pie pastries. Good in a pinch, but never as good as you're own.

Hope this helps!

Last night we had to go to a funeral home to pay respects to one of Gene's co-workers whos mother passed. Afterwards we went to a local pub for burgers.

Tonight, leftovers...either chicken or bean soup! Depends on Gene's tummy which is currently upset.

Well tonight we're having homeade pizza... I went to this grocery store that begins with a "W" that

I have a lemon zucchini and chicken recipe also. Message me if you want the marmalade or chicken recipe.

Ooooh! I would love the chicken recipe!

Try using the vegetable shortening instead of lard. Also, Carla's trick with the vinegar works well too. The other thing is the flour here. It's not the same as Canadian flour. Canadian wheat is hard, so it contains more gluten. US wheat is soft, so it has less gluten. Try using bread flour instead. That's the equivalent of Canadian flour.

@ Kathryn - One of my favorite things to do with zucchini is thinly slice it and sauteed it with chopped onion until fairly soft, then add eggs and cheese and scramble. My mom used to use parmesan cheese for some reason and always called this a "zucchini omelet", even though it really is just scrambled eggs!

Mmmm. That sounds good.

Well, I am on a countdown to clear out my fridge and freezer before we leave for our hols. We're off to Atlanta for 3 days next week, back for two days, then we leave for Vancouver. I noticed my broccoli wasn't going to last too long so I made a veggie soup with it last night and we will have that at some point. I also have some palak paneer and some vegetable biryani paste which are nearing the end of their shelf life so I was thinking I would make some homemade naan and have that this evening. But, then, I am not sure when my husband is coming home so that kinda makes me uncertain. I'll have to think about this.

Haha. Nope. Wouldn't that be awesome, though? I found a recipe which shows you how to do it on the stove. The comment by the poster says:

"This recipe makes the best naan I have tasted outside of an Indian restaurant."

So I thought I'd try it. I'm even adding fresh garlic! The grocery store by me sells fresh naan from Canada :o but I thought I'd like to try making my own this time. I'll let you know how it turns out.

You can also easily make it in your oven using the bottom part of a terracotta pot... so basically the plate. Buy a BIG one at home depot and you got yourself a great bread/pizza stone. :D

I never put milk in my KD...NEVER! If it's too dry, I put in more butter.

Tonight we're going out for supper. Shoney's I think. I've never been there, but it's kind of like a Denny's I think.
