Well I'm feeling better so think I can eat dinner.

I thought I felt better, too, so I had a little bit of my husband's chicken dinner. I was wrong. :(

Do you have the link to the chicken recipe? Or for that matter the mac and cheese? :lol: Thanks.

I made a homemade ham and cajun bean soup yesterday which was very good. 15 bean! We were tooting for hours. :lol:

I have errands to run today and one is to Costco, so I think I'll pick up a roast chicken there.

I'd like the mac and cheese recipe too! The one I used was #######.

I guess I'm back on clear soup for dinner. :(

We made this amazing baked mac and cheese recipe that we saw on the food network, baked chicken thighs with this amazing lemon spice marinade that we saw on the food gawker blog and then I made some broccoli on the side.

Then we each had a small vanilla rainbow sprinkles cone from Mister Softee :blush:

Here are the recipes!

Greek Roasted Chicken

A whole chicken, cut up (or bought cut up - 4-5 lb chicken) - We used 5 chicken thighs instead of a whole chicken and it worked perfectly.

2 tablespoons lemon juice (we supplemented this with Kalamanci, a filipino citrus fruit...and it still worked out very well)

3 tablespoons olive oil

1 tablespoon garlic powder

1 tablespoon oregano

1 1/2 teaspoon salt

Honey Lemon Drizzle (we skipped the drizzle altogether - the initial flavours are great without this part!!)

1/2 cup honey

3 tablespoons lemon juice

Preheat oven to 500.

Mix lemon juice, olive oil, oregano, garlic powder, salt together in a large bowl. Add cut chicken. Rub and cover all pieces with the mixture. I prepared this earlier in the day and stuck it in the fridge, but the flavors are strong enough that you could do this right before cooking. (We used a ziploc bag to cut back on the mess to mix everything up)

Place chicken into a deep roasting pan, keeping the chicken in a single layer.

Roast for 30 minutes. While chicken is roasting, mix together honey and lemon juice.

Watch chicken carefully the last 5 minutes. When the chicken skin starts looking golden, then quickly pour a bit of the honey drizzle over the chicken pieces. Cook for an additional 5 minutes until skin is blistered and slightly glossy.

Take out from oven. Allow to rest for 10 minutes. Serve with lemon wedges if desired.

Wilson's Own Mac n' Cheese

Ingredients

* 2 quarts water

* 1 tablespoon kosher salt, plus more for seasoning

* 1 tablespoon vegetable oil

* 2 cups uncooked elbow macaroni

* 2 eggs

* 1 1/2 cups evaporated milk

* 1/2 stick butter, melted

* Freshly ground black pepper

* 16 ounces shredded sharp Cheddar

* Dust with paprika

Directions

Preheat oven to 325 degrees F.

Bring water, salt, and oil to boil over high heat Add pasta, bring back to a boil and cook until al dente, 8 to 9 minutes. Drain pasta and rinse with cold water to stop the cooking process.

In a large bowl, mix together eggs, evaporated milk, melted butter and salt and pepper, to taste. Stir in 3/4 of the cheese and add the pasta. Spray an 8 by 8-inch baking pan with nonstick spray and add the pasta mixture. Top with remaining cheese and dust with paprika.

Bake until the cheese is golden and bubbly, about 30 minutes. Serve hot.

The Publix near me has added a little tiny British section in it's ethnic foods aisle. I find it hard to think of Digestives, HP sauce, Crunchie's, Toffee crisp, etc as ethnic. They were out of Flake bars today. I wanted to get one for Phil to try.

One of the big Zucchinis stuffed with couscous, onions, garlic, peppers, and cheese with more sliced cold roast chicken, sliced fresh tomatoes and cucumbers. We picked up some 'personal sized' watermelons at Cosco yesterday so we'll have one of those for dessert.

I'm getting tired of finding new ways to cook zucchini - not tired of eating it, just cooking it!

I love to roast zucchini in the oven as a side dish! I also love to stuff my zucchini like you do Kathryn, but with a ground beef, tomato sauce, with onions, garlic, and carrots in it instead. YUMMY!

I love to put zucchini in spaghetti sauce, chili, and hamburger soup! It's also really good in stew!

I don't blame you for getting tired of cooking it though. Sometimes it's hard to be creative. I feel that way with ground beef! :)
