I made Cheesy Chicken Empanadas the other day.. they were really yummy and even better warmed up the next day.. I used this recipe.. http://www.kraftrecipes.com/recipes/cheesy-chicken-empanadas-120124.aspx I didn't have Chipotle Flavored Reduced Fat Mayonnaise so I made some chili lime mayo.. I think you could also use sour cream or even softened cream cheese... also next time I make them I might cut the dough into squares...

last nights dinner was so yummy. David did a beer can chicken on the grill.. he didn't really use a lot of beer and he added some orange and lemon juice to the beer plus some orange rinds ... and we rubbed the chicken with our favourite spice rub.

I chopped up some vegges and threw some olive oil on it and some of our favourite spice rub and baked it covered in the oven for like 30 minutes or so and then David threw them in the grill pan and just grilled them for a few minutes.

everything was sooo good!

Favourite Spice Rub Recipe

2 tablespoons light brown sugar

1/2 teaspoon basil

1/2 teaspoon oregano

1/2 teaspoon thyme

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon Seasoned Salt

1/8 teaspoon Ground Red Pepper or Black pepper

You can out this on chicken or mix it with veggies.. when I do it with veggies I throw in some olive oil with the rub... i have also used this rub when I make potato wedges..

Last night's dinner was yummy! Pasta with veggies (chanterelle, baby bella, oyster and shitake mushrooms, asparagus, spinach, olives, artichoke hearts, red onions, yellow pepper, roasted red pepper, capers, sundried tomatoes) satueed with olive oil, wine and pine nuts, served over gemelli pasta with shredded parmesan cheese. Not sure what tonight's dinner will be.

That sounds lovely. My daughter brought me my favourite lemon pepper pasta from this little shop in Italy which makes fantastic pasta so I've been saving it for that perfect time. You made me think of it because those are some of the ingredients which will go into it. However, this is not the perfect time. I pretty much haven't eaten all week because I have the flu and my husband is away. :(

Krikit (L) Guess I have been a VIsa Journey slacker lately :) Sorry to hear you are ill. Save the yummy pasta for when your tastebuds are fully functioning.

BTW, dinner tonight was leftover pasta. I swear, I could eat this meal daily for a week and still be in heaven each time.

That is awesome. My husband surprised me with a new mixer.... a Kenmore Elite. We took it back because it leaked gear oil through the part where the attachments lock into and it was super loud and smelly. The reviews had convinced him to buy one of those because he was originally going to get me a Kitchen Aid. Those make me purr. lol

I've been trying to find a replacement for my old Black and Decker handy steamer. They've changed the design on the new B&D's and the reviews aren't good so I don't know what to get now. I really miss my steamer.

I love my steamer, I used it the other day to make a ton of baby food. I love it for that because you can use the water that has dripped out of the veggies to put back into the puree so that you don't lose any nutrients. I made enough food for over a month for about $7. But I do have a jar full of halr pureed green beans in the fridge because my blender died halfway through :(

ETA: I have had such a lack of creativity when it comest to dinner the last few months since Si is working evenings and is never home I can't be bothered to cook for myself. I have been eating a lot of weight watchers meals to get rid of my baby weight...lol

Hey guys, What's the advantage to having a steamer? I usually just steam my vegetables in a pot with a little bit of water and one of those cheapy steamer "trays" that rests on the bottom of the pot. You guys seem to love your steamers, so I must be missing something!

For me, I like that I don't have to watch it so it doesn't boil dry or overcook. I can do all the prep work and let it sit there until I get to the point in the meal where I can turn it on to finish at the same time that everything else is ready. Asparagus ALWAYS came out perfectly at 7 minutes. And the rice always came out perfectly. I'm doing everything on the stove, now, until I find a replacement, but it's not as convenient and the results aren't as consistent.

I had no idea there were other steamer lovers out there! My husband bought one months before I arrived and swore by it, but I was hesitant to use it.. I tried it one day and enjoyed it immensely. It is a wonderful contraption.

Ours is "Rival" brand. Normally I wouldn't buy Rival because it's not a great brand, but I highly recommend this steamer. My husband said it was cheap ($20 or so) and it works wonders.

I'm using it tonight to make corn on the cob! It turns out really well in the steamer. We're also having pulled pork (cooked for 8 hours in the slow cooker and drenched with hickory & brown sugar BBQ sauce... yummmm), rice, and some other veggies that I haven't decided on yet. :)
