I made a shrimp, asparagus, and pimento quiche with Neufchatel and cheddar cheese - yum!

“...Isn't it splendid to think of all the things there are to find out about? It just makes me feel glad to be alive--it's such an interesting world. It wouldn't be half so interesting if we knew all about everything, would it? There'd be no scope for imagination then, would there?”

we made some grilled zucchini for dinner today.. it was so good..

I cut the zucchini in half lengthwise and spread half with butter and the other half I sprinkled some salt, lemon pepper, garlic powder, oregano and Parmesan cheese , then I put the two halves together.. I then cut it in half the other way(you can cut them into more pieces depending on the size of the zucchini) and wrapped them in foil and then grilled them on the BBQ for about 10 minutes...

Went over to the sister in laws, and she made jabanero (sp?) chilli, with jabanero noodles. spicey but was very very good, however, i'm paying for it today.. i made a mocha chocolate cake which turned out soo fudgey and moist. and we had some cowboy chili aka was like a cold bean salad to me. chick peas, corn, white beans, onions, celery cilantro, italian dressing, umm somthing else lol very good. then we had godiva coffee chocolate and watched true blood. Very nice day out! sunshien and a pool as well.

our dinner last night was so yummy.. I will definitely have to buy more lamb in the future..

the corn was cooked to perfection thanks to the hubster.. we eat it with mayo and Parmesan cheese, it sounds weird but it tastes sooo good..

tonight we are grilling burgers and corn on the cob...

No burgers, but we boiled corn on the cob last night. Yvonne put a chili lime rub on hers, and I sprinkled some of the Red Robin seasoning you can get at their restaurants on mine... Mmm, mmm, good. :D

When I read the bolded part, I got to thinking... Whenever I have Kraft Mac and Cheese (bought in the US) I can't help but think it tastes different than the KD I remember making back in Canada. Not only does it taste different, but leftover Mac and Cheese simply will not re-heat and taste decent if put in the microwave; the sauce just becomes non-existent somehow. I wonder if the two vary?

I'm trying to think of what to make for tonight's dinner. I have a pack of chicken breasts to work with, and very little ingredients to cook with the chicken that aren't "obligatory dried spices".

a simple way to use chicken breasts is to cut them into strips and then brush them with your favourite mustard and then roll in some seasoned bread crumbs and bake in the oven.. You probably could leave the chicken breast whole too if you wanted...

oh and we are having burgers and corn on the cob.. the hubster didn't have to work as late as he thought...

tomorrow he says he does, so then I will make the KD... I plan to male it "fancy" by adding tomato and ham after cooking the mac and cheese and then putting in in a dish and sprinkling cheese over it and baking it in the oven
