the hubster is going to barbecue some hotdogs and potato wedges...

this is the recipe we are going to use for the wedges... instead of doing them in the oven we are going to wrap them in foil and do them on the BBQ

Barbecued Potato Wedges Recipe

* 2 lbs small red potatoes, cut into wedges

* 2 tablespoons butter, melted

* 1 tablespoon honey

* 3 teaspoons chili powder

* 1/2 teaspoon salt

* 1/4 teaspoon garlic powder

* 1/4 teaspoon pepper

1. Place the potatoes in a 15-in x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Drizzle with butter and honey. Sprinkle with chili powder, salt, garlic powder and pepper; toss to coat.

2. Bake, uncovered, at 450 for 25-30 minutes or until potatoes are tender and golden brown, stirring once.

I am making this for dinner otnight...

Crock Pot Hungarian Goulash Recipe

* 2 lbs beef stew meat, cut into 1 inch cubes

* 1 large onion, sliced

* 1 clove garlic, minced

* 1/2 cup ketchup (I substituted tomato paste for part of the ketchup)

* 2 tablespoons Worcestershire sauce

* 1 tablespoon brown sugar

* 2 teaspoons salt (I cut back on the salt)

* 2 teaspoons paprika

* 1/2 teaspoon dry mustard

* 1 cup water

* 1/4 cup flour

1. Place meat in crockpot and cover with sliced onion.

2. Combine garlic, ketchup, Worcestershire sauce, sugar, salt, paprika and mustard Stir in water, mix well, and pour over meat.

3. Cover and cook on low for 8 to 10 hours.

4. Turn control to high.

5. Dissolve flour in a small amount of cold water and stir into meat mixture.

6. Cook on high for 10 to 15 minutes or until slightly thickened.

7. Serve over noodles or rice.

So, another night trying to find a different way to do zucchini/yellow squash :D!

Tonight I'm doing this:

Impossibly Easy Zucchini Pie

1 medium zucchini and 1 small to medium yellow squash, cubed (from our garden)

3 green onions sliced

2 Anaheim peppers, diced (from our garden)

2 tbsp dried vegetable flakes

2 oz ham, chopped

1 tbsp Mrs. Dash's seasonings

4 oz mozzarella cheese, grated

1/2 cup Bisquick mix

1 cup milk

3 eggs

salt/pepper/paprika

*Heat oven to 400 degrees F.

*Spray bottom and side of regular pie 9" x 1 1/4" pie dish with cooking spray.

*Put zucchini, yellow squash, onions peppers, vegetable flakes, ham, seasonings and cheese into the pie plate and mix together.

*Beat the eggs into the milk until well blended then add the Bisquick to the milk and egg mixture. Stir until blended.

*Pour egg/milk/Bisquick mixture over top of the mixture in the pie. Make sure the liquids are evenly spread throughout the pie dish.

*Shake salt, pepper and paprika over top (to taste).

*Bake 30 to 35 minutes or until toothpick inserted in middle comes out clean. Let stand 5 minutes before cutting.

So, it looks pretty good - now I'm just waiting for Joe to get home from work. We'll have a lettuce and tomato salad (also from the garden) and fresh Semolina bread with it.

Don't know what to call what I made tonight :D! I sauteed half pound of hot Mexican sausage, added in a chopped onion, a chopped Anaheim pepper (from the garden), a chopped medium/large yellow squash (also from the garden), added a can of tomatoes and green chilies, cooked it all together until the flavours blended, then stirred in steamed rice and heated it through. Yummy!

Met a friend at the Thai restaurant. We got a bunch of things to share between us and Declan. He continually surprises me with foods he likes. Tonight, he adored the calamari, miso soup with tofu, seafood dumplings and chicken and potato curry. My friend and I also had sushi which I declined to share with my 2 year old. I'm such a mean mommy :)

I have a new favourite Indian restaurant in Virgnia now. Except I can't go back there for a while because hubby and I had a disagreement so they need some time to forget my face. <_<

Tonight (last night) my parents wanted beans on toast. So that's what we had. Tomorrow night my kids are coming over and we are all going to the pub. I will probably have Guinness and pub grub. I had the roast lamb with yorkshire pud and mashed potatoes last week. It was nummy.

I so miss being able to have a garden. It was so convienient to come home and just pop out to the garden to get fresh veggies to make dinner with. I ate most fresh, but I always planted a lot of tomatoes to can and cucumbers to pickle. I also liked that I knew that there were no pesticides used (I did use a little fetilizer on my tomatoes and peppers) and you didn't have to wash things for 20 mins to get rid of that icky taste!! Sometimes when I wanted a snack, I would just go our to the garden, pick a few carrots, wipe them off and eat them fresh. YUM!!!
