Made a decent Roast tonight, along with Mashed potatos, carrots and corn.

It was a Lipton's recipe my mum has made for years

3-4 lb beef roast

1 Lipton's Onion soup envelope

1/2 - 1 c red wine (I used cheap Shiraz...was great)

In an oven safe pot- line the pot with 2 long sheets of foil criss crossed - with the edges hanging over to fold over the roast.

Place the roast in the pot, sprinkle with the onion soup and pour the wine overtop. Join the 2 sides of 1 foil strip and roll up, do the same the other way.

Cover with the lid. Bake at 350 degrees for about 3 hrs. No need to touch. Take roast out to rest, leave all the juices and left over onion bits and wine drippings. Add beef broth or additional water to make gravy. Make gravy as usual.

bah back to lonely single dinners for myself /sigh. lol i had a blast cookign for david's family while i was in Chicago. I tend to use alot of diff spices and make sure you can smell the food cooking :) gotta love that garlic!

Looks like tomatoe soup and grilled cheese tonight. soul food as i call it. Since this is hopefully my last month in canada. go go interview in 30 days!

I marinated some chicken with some lemon juice, basil, oregano and thyme. after they were done marinating I fried the chicken up. then i took some fresh tomatoes and sauteed them with some garlic.. threw them with a can of spiced stewed tomatoes in a blender and blended until smooth. then I fried up some onion and added the blended sauce and chicken back to the pan with a few more spices... Will serve this over pasta...

corn chowder for dinner tonight.. I didn't follow a recipe.. I just threw a bunch of stuff into the crock pot... chicken broth, a couple cans of creamed corn, some frozen corn, some sauteed onion and celery, some spices and some frozen shredded hash-browns... we will see how it turns out... :whistle:

I got so lazy, just diced some yellow potatoes, threw them in a super hot oven and roasted them til crispy and tender. And then I ate ice cream.

God the carbs...

I had Mapo Tofu.

I love the sauce, but I still have a hard time stomaching tofu.

The texture is just... ugh to me.
