I went to a Jack and Jill wedding shower on Friday night and had the yummiest spinach dip .... so now I need to run out to the store and get the ingredients for it because that is what I am craving!!! Now sure what else I will make today. Honestly, I would be happy eating spinach dip, bread and raw veggies, but hubby is not QUITE as much of a spinach dip fan as I am, so I guess I should be a good wifey and make him something tasty too. Especially considering he got up with Declan at 6 am and let me sleep for another 3 hours AND last night, I got to be the one who had a few drinks!!! Such a rare occurrence and it was SO NICE!!!

We went to watch the fireworks at the Spalding Inn, which is owned by the guys from Ghost Hunters (just an interesting tidbit, doesn't really matter to me because the place itself is nice).

Off topic - you went to a Jack and Jill in the US? I've never heard of them here, only Canada! Whenever I mention it, people don't know what I'm speaking of.

MMMM spinach dip. I make the best one in a pumpernickel bowl, now I have to bring it to all parties/get-togthers as it's expected!

Homemade salsa, refried beans, cilantro and 1 fried egg on a deep fried corn tortilla.

You make the salsa...

1 onion

1 clove of garlic (minced)

1 jalapeno

2 tomatoes (drained)

salt, pepper and some hot sauce...

I like to use the food processor just pulse it once or twice so its chunky but not too watery.

Cook it in about a tablespoon of olive oil for about 4 minutes until it thickens slightly, take it out, put it aside.

Fry the black beans in the same pan with 1 clove of smashed garlic, mash them lightly with a fork.

Fry the eggs, sunny side up.

Fry the tortillas in a separate pan in some canola oil until they are golden.

Take the refried beans and put them on the tortilla, then add the egg, and then the salsa over top and just a little cilantro for garnish. :D

Its sooo good.

Makes 4 yummeh huevos rancheros. :D

We had a few things this weekend that ended up in the fridge for lunches and leftovers. Since I won't be eating any solid food for a few days Gene will have a nice array of food for his lunches and supper. Last night we had dijon mustard chicken, cheezy potato casserole and a green salad.

Last night I took the night off so my husband brought home the triple salad medley from Crispers and I made beef vegetable soup. Do not get the chicken pecan salad if you ever go there. It's disgusting. :dead:

Tonight I will probably make something with chicken. Not quite sure what, yet, but I have these leftover fried chicken pieces that I'm going to take the skin off because we didn't like it. Maybe a chicken pot pie or something.

Had this for dinner last night - a recipe from the Kitchener record newspaper.

I added in some slivered red pepper in step 3 before adding the sauce. Doubled the recipe, I might have added less of teh red pepper flakes in hindsight...but the sweet cut the heat pretty well anyway. really good

MONGOLIAN BEEF

Recipe by Louisa D'Amato, ldamato@therecord.com

2 tbsp. (30 ml) vegetable oil

2 to 3 cloves garlic

1/2 tsp. (3 ml) finely chopped fresh ginger

1/2 cup (125 ml) of water

1/2 cup (125 ml) of low-sodium soy sauce

1/2 cup (125 ml) brown sugar

1/2 tsp. (2 ml) hot red pepper flakes

1 lb. (450 g) flank steak

1/4 cup (60 ml) cornstarch

A green onion, chopped, for garnish

1. Heat 1 tbsp. (15 ml) of the oil in a large skillet on medium heat. Chop the garlic and ginger finely and add to the skillet. When they start to turn golden, pour in the water, soy sauce and brown sugar. Stir until sugar is dissolved, add the hot pepper flakes, then pour into a bowl.

2. Cut the flank steak into thin strips, across the grain. Toss with the cornstarch and shake off excess. Put the remaining tablespoon of oil into the pan and heat. Put in half the meat and cook very briefly, just until the outside is no longer pink. Push the cooked meat over to the side of the skillet, or onto a plate, and quickly cook the other batch.

3. When all the meat is cooked, put it all back into the skillet, then pour in the sauce. Simmer about 10 minutes, until sauce is thick. Serve over hot cooked rice and chopped green onions for garnish.

Makes two servings.

The garden is starting to produce so tonight is another stirfry with green onions, zucchini, eggplant, peppers (3 different varieties), and left over ham with sides of left over pinto beans from last night and biscuits. I foresee lots of veggies in our future dinner plans - time to dig out my recipes for stuffed zucchini and eggplant parmigiana.
