Tonight will be chicken and veggie quesadillas, methinks.

Last night was the first time I ever baked chicken legs. Silly as it sounds, I'm quite proud of myself for how well it turned out. Just a simply salt and pepper rub, skin on. That was served with cheesy broccoli and a chicken-seasoned rice dish.

01/08/2010 - Applied for SSN in maiden name.

01/09/2010 - Married! Officially a Missis.

01/19/2010 - Received SSN in mail.

02/10/2010 - Sent I-485/I-131/I-765 to Chicago.

02/19/2010 - NOA dates for all applications.

02/22/2010 - Received NOAs in mail.

02/23/2010 - Applied for SSN for married name.

03/04/2010 - Applied for Florida DL in married name.

03/09/2010 - Biometrics appointment.

04/18/2010 - AP received.

04/23/2010 - EAD approved.

04/27/2010 - AOS Interview at Orlando USCIS (decision pending).

04/28/2010 - Card production ordered!

05/03/2010 - EAD received.

05/03/2010 - Welcome letter received.

05/28/2010 - Green Card received in mail.

01/26/2012 - Mailed RoC packet to VSC.

01/30/2012 - NOA date on application.

02/01/2012 - Cheque cashed.

02/05/2012 - Received NOA in mail.

02/10/2012 - Touch.

02/24/2012 - ASC Appointment Notice dated.

02/27/2012 - ASC Appointment Notice received.

03/23/2012 - Biometrics appointment.

09/20/2012 - Touch. Card Production ordered!

My spaghetti sauce last night was awesome. I had ground beef in it, spices, carrots, zucchini, orange peppers, onions, mushrooms. Very yummy. Today I'm going to be out all day so I'm have a crock-pot roast.

I made hamburgers, potatoes and spinach last night. The spinach was from frozen. I normally never buy frozen vegetables, because I don't like them. I bought the spinach to make spinach dip, but since I hadn't I thought, what the heck, I should use that. It was yukky. It was just all wrong, from the texture to the taste. Threw it away.

I don't "get" frozen spinach. lol. If a recipe calls for frozen spinach I use fresh. Never once have I said "OMG, this is vile. I should have used the frozen spinach!"

Last night I made seafood alfredo. I also started a bean soup in the crockpot. (Trying to whittle down my stockpile of groceries.) I was going to add some mini meatballs I had made and then frozen, but they had freezer burn. Now I have to go to the store for the ingredients to make some more. I don't want to go to the store. :( Maybe we'll just have meatless bean soup. :)

I am going to make a "gravy" using mushroom soup .. I was going to fry up some ground turkey with it but I think I am just going to add vegies, mushrooms, bell pepper, onion, carrot, celery etc... then I am going to serve it over egg noodles...

I have no idea what we are having for dinner. Mike is covering for someone so he is working until 7. Umm, maybe grilled cheese. I don't really feel like eating grilled cheese though, which is unusual.

We have been cutting down on groceries too, since we are moving at some point - we don't even had a snack in the house, not one!! Which is probably good as i'm eating bananas and yoghurt for snacks - but hey, how about a rice cake!

I am in the unfortunate position of having multiple snacks which require eating. :(

I did the roast in the slow cooker yesterday but used bbq sauce on it and then shredded it when I got home. So, we had bbq pulled beef on a bun, a corn bean pepper onion mixture, baked beans and some onion petals that the lady at Costco FORCED me to buy. :lol: Tonight a zucchini casserole and salad.

No I don't make them I just buy boca.

However my husband does make them sometimes and I don't know his recipe, but I'll try to to get it off of him.

I don't know if he uses one, he just kind of throws things together and they always come out yummy.
