I'm not quite sure what we'll have this evening. I have fresh asparagus so maybe seafood. I have some sea scallops in the freezer. We could have those on baby spinach with grilled peppers and asparagus with a light lemon-dill dressing. I guess I know what I'm having now. lol

Marilyn -- Ive made a menu for this week too! Its a challenge to stick to it, but Im really able to bring down our grocery bill and stick to healthy foods.

Tonight's dinner is creamy spinach lasagna, which I will be starting so I can stick it in the oven by dinner time, after I make some chocolate chip oatmeal cookies.

Finally married... and still married... ;)

I think I will make some cookies, now that you mention them!

We had steak and mashed potatoes/asparagus/salad last night, it was great.

Tonight I was thinking breakfast for dinner, or it might be grilled cheese and some chili, haven't decided.

I had one a few weeks ago!

Ok breakfast for dinner it is, I kind of left the bacon out on the stove that I had on for the cookies, so I had to cook it - now.

I think hashbrowns and eggs too.

I can't really cook here because what I like to eat... my in laws don't. Both of them have restricted foods too, so it makes it hard to do anything :/

Like NO dairy. Neither of them eat any dairy what so ever.

I am so proud of myself.. I made a menu for the week for the second week in a row... now I just need to stick with the menu ..lol

I do this every week, it really is nice. You know what you're having, you can budget better and you don't need to stand there at the fridge or cupboards and say: "Hmm what to make?"

Last night was a cheese tray since my attendant didn't answer my call for dinner. :\ Donno what tonight is going to be since the menu on the trains kinda sucks.

I'm not on the train at the moment. :P I'm in Chicago waiting for my DC train which leaves in an hour. Talking to hubby on Vent right now while we have the chance. Will board the train in 30 minutes.

Tonight's dinner is spaghetti with a meat, mushroom, onion, pepper, black olive and zucchini sauce.

Just got back from vacation (or holidays as my hubs would say) ...

This week, I need to start atoning for all the eating I did in FL. We went to too many buffets, partly because my stepfather really loves buffets and partly because it was nice to be able to feed Declan right away in a restaurant. We had Chinese buffet, Golden Corral, an actually nice buffet on the Clearwater beach of prime rib and crab legs ... and then this seafood buffet with lobster (which I love and seriously ate 3 of them!!!). Then, we spent 4 days at Disney and ended up eating mostly fast food. It will be nice to cook again and eat healthier.

yeah my mom always did menus and I have tried to in the past but what I did was just have a list of recipes and then decide on the day which one of those recipes to make but it never really worked :P... so now I plan what to make for a specific day...
