Thanks for the recipe krikit, I will try that next time - the one I was using that I found online was tooooo moist - it was supposed to be 'for two' but she used 1 cup of bread and 2/3rds of a cup of milk - based on the recipe you posted that would be why! Too much milk.

so I decided to make pozole.. this is the recipe I used...

Mexican Pozole

2 pounds lean beef, cubed

1 tablespoon olive oil (i just use the olive oil spray)

1 large onion, chopped

1 clove garlic, finely chopped

1/4 teaspoon salt

1/8 teaspoon pepper

1/4 cup cilantro

1 can (15 ounces) stewed tomatoes

2 ounces tomato paste

1 can (1 pound 13 ounce) hominy, drained and rinsed

In a large pot, heat oil and saute beef. Add onion, garlic, salt, pepper and enough water to cover beef. cover pot and cover low heat until meat is tender. Add tomatoes and tomato paste. Continue cooking for about another 20 minutes. Add hominy and continue cooking for another 15 minutes, stirring occasionally, over low heat. If too thick, add water for desired consistency.

Option: skinless, boneless chicken breast may be used instead of beef.

**I used some celery and carrot too. I added it to the pot after I sauteed the beef.

you can serve it with with extra cilantro, radishes, shredded cabbage, red onion etc...

We had tomato soup lastnight! Made it from a recipe my daughter had in a recipe book she bought when she was 6 (5 years ago!). It was actually quite good. It called for small pasta but we put quinoa in instead and it turned out really well. Even my picky teenager son ate it!

Tonight is eggplant parmesan.... mmmm....

I thought that converting to vegetarianism would be difficult (my husband, and both his kids are vegetarian) but I actually don't miss meat at all. Weird!

04/15/10 - Interview @ 10:30am - APPROVED!!! Email - Green Card production ordered! (Day 80)

04/16/10 - My AP received in mail (no approval email), ANOTHER email EAD Card production ordered, Touch on I-765, I-485 & I-130 (Day 81)

04/20/10 - Green card status changed to post-decision activity, Touch on I-765 & I-485 (Day 85)

04/26/10 - Greencard RECEIVED!!!! (Day 91)

If you're getting your complete nutrients through your veggie diet, you most likely won't crave meat. :) I'm glad it's working for you!

Mal -- do you fry your yam fries to make it crispy? I looove yam fries but Ive never been able to re-create it at home :(

Tonight's dinner menu include chicken cordon bleu, potato gratin and pasta shells tossed in a simple marinara sauce and olive oil.

Finally married... and still married... ;)

Nah, I don't fry them. :\ I just coat them in olive oil, salt, and paprika then bake them for 20 minutes. I still haven't been able to perfect them and make them crispy, but they are still tasty. :)
