Homemade macaroni and cheese with some Bush's vegetarian baked beans on the side. Making extra mac and cheese to have this next weekend when my fiance' comes to visit so I can feed him but not have to spend much time cooking! Seeing him is SO much more important!

Um. I have spent the weekend snacking on bread and nice cheese, olives and pickles. is that odd? I've just been snacky in the evenings. OH and mangos, which I love) and nice jam on bread. bi

I also cleaned out my kitchen of all extraneous foods and things today. I feel like I'll just be eating 'immediate' foods for the next while...

I'm a snacker when I'm eating by myself for the most parts -- I'll cook if I want something specific but I snack...

This last week I had been totally carb-loading as I was on pins and needles waiting for my NOA2! When it came on Friday night I celebrated! Cookies! Hum, the cheese, bread, olives, and pickles sound like a good combination though.

We finished up that slow cooker potato soup this weekend, and last night I made a chicken concoction that included onions, peppers, black beans, and corn in a cream sauce served over egg noodles. I have no idea what to serve tonight. I think I have a small sirloin tip roast in the freezer I should take out.

Last night I made a roast pork with gravy, carrot & turnip (mashed with parsnip - British thing), roast potatoes, and cabbage with bacon. I also made a pear cheesecake with almond slivers and the Ghirardelli chocolate-pecan cookie recipe. Tonight I think I am going to make soup and a Cobb salad.

OMG. I wrote "almost" instead of "almonds". Good thing I double-checked. :lol:

Thanks Carla - I made this last night...it didn't turn out quite as I expected, but tasty none the less. I think it might be good to have one of those hand blender/ puree thingys available to make the soup smoother?

Seems a little thick, even though I used skim milk and blended that with the flour. the carrots were a great addition! I'm thinking a little diced ham would be yummy too.

I got this from a Betty Crocker Soups and Stews magazine.

Slow Cooker Cheezy Potato Soup

1 bag frozen southern style diced hash browns

1/2 cup chopped onion

1 stick of celery, chopped

2 cans chicken broth

1 cup water

3 Tbsp. flour

1 cup milk

2 cups Sharp Shredded cheese

1/2 cup bacon bits

2 green onions chopped

Put diced potatoes, onion, celery, chicken broth and water in crock pot for 8 hours on low. Mix flour in 1 cup of milk, add some broth from soup, mix, and return to crock pot. Add cheese and stir to melt. Cook for further 20 minutes. Add bacon and green onions on top for serving.

**Note**I added a cup of shredded carrots. I put in about 3 Tbsp. dill and a healthy dash of cayenne to mine. I added 2 cups of half and half, and not 1 cup of milk. I used 1/2 lb. of bacon as well. I put them in small sourdough bread bowls. It was very yummy!

Well, we kind of stopped buying a lot of food, due to the impending move - right now I have 1 steak and 3 pork chops, some perogies, oh and some hamburgers and hamburger.

Maybe I should just cook every single thing in the freezer, make a buffet and start fresh.

I do! It's from my Grandma's Touch cookbook. Copyrighted in Alberta! I haven't made the bread pudding recipe but I swear by this book. All the recipes I've tried have been fabulous.

BREAD PUDDING

2 cups milk - 500 ml

4 cups cubed stale bread - 1 L

1 cup brown sugar - 250 ml

1/3 cup melted butter - 75 ml

2 eggs

2 tsp vanilla - 10 ml

1 cup raisins - 250 ml

1 cup coconut?? :blink: (optional)

  • In a mixing bowl, add milk to bread.
  • In a separate bowl, combine the remaining ingredients; *beat well and add to the bread mixture.
  • Pour into a buttered 6-cup (1.6 L) ovenproof casserole.
  • Bake @ 350o for 1 hour.

Yield 8 servings.

*Note: I wouldn't beat them as well as they say you should. Eggs are a protein and tend to get rubbery if you mistreat them. lol
