Timeline

When we started this process, the USCIS office in California said that their processing for a K-1 visa was 6 months. They have since changed that to 5 months. I know that the "estimated time" shown on my profile page is based upon other VJ users and how many input their data, etc... but when it says that ours is expected to be adjudicated between August 7 & August 13... are they just talking about the part that gets processed in Cali, or are they talking about the entire process up until the point of his interview?

Just the processing of the NOA2, the interview process timeframe is different for all consulates, some are within a few weeks, others are a couple months.

Just the petition approval.

Add to that 3-4 weeks for it to arrive at the consulate and be entered into the system at the consulate, then the consulate begins thier work, how interviews are handled is specific to each consulate. In Kiev, right now, you can get an interview in 4 days from when they log in the petition, if you are ready with everything, some others take many months. It will depend on the consulate. The wait for the interview can be as long or longer than the wait for petition approval. And that is if it is not held up at NVC for additional processing which can add another 2-8 weeks.
