One question I would like to ask is that when i submitted my I-129f, I included all the tx returns + affidavit of support, will it cost any time delay because i submitted too much information up front?

well it has been said that a USCIS adjudicator spends on average about 15 minutes on a file before rendering a decision... submitting more than what is required will cause the adjudicator to sort through more information but the actual effect might be hard to distinguish.

No. But you will have to submit it all again. Your fiancee needs to bring this to the interview. DO NOT count on it being there and DO NOT count on them figuring it out. The I-134 is best completed as close to the interview as possible. There is no particular time fram required but why not?
