I've never been able to stomach rare cooked beef.

It has to be good beef. If the beef tastes good raw, it will taste good cooked.

Bill, have you tried hot pot or Pho with thin slices of raw meat? Delicious...although the meat gets cooked from the hot broth.

No, never heard of the stuff. I have eaten raw tuna, with a little powdered mustard and soy sauce. I have not done it in a while, but when preparing certain beef dishes, I would usually taste the meat to check its flavor before cooking. I still like my steaks wiggling on fire when I pull them off.

It's all wasted on the wife, because she covers everything I barbeque with Mang Tomas.

Next time you're in an Italian restaurant, try some carpaccio. It's effectively beef-sushi. Thinly sliced raw beef. I indulge occasionally. Though my better instincts are aligned with yogib37 - red meat is best eaten sparingly in small quantities, and thoroughly cooked. I just don't always listen to my better instincts, carnivore that I am :P

I eat a lot less beef than I used to since I got married. The wife eats a lot less fish. It's a compromise, so we eat a lot of pork and chicken. I treat myself to beef when she is not around, and she treats herself to tuyo when I am out.

Don't just open your mouth and prove yourself a fool....put it in writing.

It gets harder the more you know. Because the more you find out, the uglier everything seems.

Powdered mustard is simply finely ground mustard seed. Mustard seeds can be stored for up to a year in a dry, dark place and powdered mustard for about 6 months.

English mustard to be exact. Mix with some soy sauce to make a dipping sauce for your sashimi
