Hotdogs And Beans

1 lb Frankfurters

32 oz Can pork and beans

8 oz Crushed pineapple in juice, -unsweetened, undrained

1/4 c Chili sauce

1/4 c Finely chopped onion

1. Slice frankfurters into 1/4-inch rounds.

2. Place frankfurters, beans, pineapple, chili sauce and onions in a 2-quart, heat-resistant, non-metallic casserole.

3. Heat, covered, in Microwave Oven 8 minutes stirring after 4 minutes.

4. Allow to stand covered for 2 minutes before serving

SOS

2 lb ground hamburger, fried and minced.

1 onion, diced

4 to 5 tablespoon flour

16 oz. can crushed tomatoes

1 teaspoon sugar

2 tablespoon soy sauce

1/8 teaspoon mace

1 cup water

2 cup beef broth

1 teaspoon salt

1 teaspoon pepper

Fry onions and set aside. Fry hamburger until no longer pink, *mince it (mince is optional) and return it to pan, sprinkle on flour and continue cooking mixing in flour until no longer white. Add onions and all remaining ingredients. Stir and cover, lower heat, simmer 30 minutes, stir frequently. Thin with more water if needed. Place in warm oven 30 minutes or until ready to serve

Spoon over toasted and lightly buttered bread slices. * Dried-out toasted bread is best.

CORNED BEEF HASH

3 lbs. corned beef

3 potatoes

2 Tbsp. butter

1 green or red pepper

1 large onion

1 whole egg

1 egg yolk

1 tsp. Worcestershire sauce

4 Tbsp. butter

Place corned beef in kettle, add water to cover, and bring to boil, then lower to a simmer and allow to cook for 3 hours.

Remove from kettle and let cool.

Trim off excess fat and cut into small cubes.

Boil potatoes in salted water until tender, but still firm

Drain, then cool.

Chop pepper and onion into a fine dice, then sauté in butter until wilted.

Put corned beef, potatoes, pepper and onion in a bowl, then add whole egg, egg yolk and Worcestershire sauce.

Blend well, form into a compact loaf, cover with plastic wrap and refrigerate, preferably overnight. Or form into individual patties.

Heat butter in skillet and add meat mixture, turning to cook thoroughly.

When meat is nicely browned, place under a broiler for a few minutes to make the top crisp.

Beef & Pork Meatloaf

2 cups bread crumbs

1 pound lean ground beef

1 pound lean ground pork

1 egg, slightly beaten

3 T chopped parsley

1 medium onion, chopped

3 cloves garlic, chopped or pressed

1 stalk celery, finely chopped

1/2 tsp. thyme

1/2 tsp pepper

1 1/2 tsp. salt

3 hard boiled eggs, peeled (optional)

Pre-heat oven to 350°F. Mix all ingredients together. Shape into a loaf pan. Bake for 1 1/2 hours.
