One question on D-230 part I:

Question 14-should I put here my fiance's name and his information? Since we are not married, I assume that technically his is not yet my SPOUSE. And the date of marriage???

i think you're filing for K1, so that means you don't need a d230 form

the forms you need are:

DS 156, DS 156K and DS 158

plus the i-134 for the affidavit of support

If you take a look at the example form they have here on VJ you will see it's a not married person answering the form.

Its checked as single, and for spouse on question 14 it was written "none". I think that's your case.

Some consulates require the DS230 for K-1 visas. He is not your spouse. That would be for any previous spouse or if none, answer "none"

Seems that others have had experience with this. I have a question re question 14 on ds-230. My fiance is not my spouse yet so I am correct in saying that it is not relevant to put his details on the form?

Would anyone know if I need to put my ex husbands details? Any response is much appreciated.

An ex husband is not your spouse. (It's a present tense question.) Unmarried people answer "None". Only give information about former spouses when asked about former spouses.
