    • A rare done steak should be warm through the middle, lightly charred on the outside, browned around the sides and bright red in the middle.

    • At medium rare your steak should be warm through the middle with a hint of red. Most of the center of the steak should be pink. The sides should be well browned, the top and bottom charred to a dark brown color.

    • Well done. This steak should NOT be burnt on the outside. While there is not even the faintest hint of pink in the middle it should be browned through, not burnt through.

Everyone here raves about Ruth's Chris Steakhouse so we went to one. I guess my expectations were a bit higher from the buildup because I was a little disappointed. Did you guys hear that all the Outbacks closed down at home?

The steak was horrible at RC's. They broil the steaks which I don't really like. Everything else there is great though- just not the steak.

That's what I thought, too. The steak was horrible. And then they "finished" it with a huge glob of butter. Yuck. I nearly gagged.

I didn't hear that - I see they closed down in Ontario!

We only ever went to the one in Calgary once, we walked in, looked at the menu, looked around and left.

But..... but..... I thought Ontario WAS Canada. :hehe:

My wife thinks I'm an oddity, and probably most others do too.

I like my steaks "Blue". Not Pittsburg Blue which is ultra rare on the inside and burnt on the outside, mine is a special blue, usually served to the bare legal limit a restraunt can cook it. Usually 10-15 seconds, though I try for 8 if they can.

Texas Roadhouse here knows how to do my steaks perfectly. Cooked on the outside, but nowhere near burnt and bloody pure red and cold on the inside. Usually I eat some of my steak, put it in the fridge and eat it the next morning.

It can be a bit chewy, but basically my meal goes from pasture to my plate in no time...

I generally like my steal medium-rare. My wife likes her steak a little less rare than I do, but then again, she's not a big steak fan.

The poor experiences described at Ruth Chris are a little odd. I've been there and it's been fantastic. My wife thought so too and she can be extremely choosy when it comes to food. Of course, RC is in numerous locations (I went in Houston, TX) so I can't imagine every single restaurant does the exact same thing or even to the same standard. The chef can make a huge difference, regardless of the restaurant's overall quality.

Two other places I've been to -- and I really like -- are Taste of Texas and Pappa's Steakhouse. The latter's name could be better, but it's quite upscale and has terrific steaks (among other other items). What's amazing to me about the Taste of Texas is that it can get full around 4pm. If you decide to go at 6pm, forget it. You'll have a long wait on your hands.

Granted, the above two aren't in Canada. There's only one Taste of Texas and I think the Pappas restaurants are Texas-based, as well. Maybe it's only Houston-based. I'm not sure. :unsure:

Medium for me ... occasionally medium rare. I've come a long way since I was a kid and had to have it extremely well done and then poured ketchup over it to boot!

BTW, I also had a bad experience at RC's and haven't been back. Personally, I really like the steaks at the Keg in Montreal (hubby likes the Vancouver restaurant too).
