Here is my version of adobong kambing. Enjoy!

Ingredients:

1 k. kambing spareribs, cut into serving pieces, bones intact

2 thumb size ginger, sliced

1/2 head garlic, crushed

1 large onion, sliced

1 tsp. peppercorns

2 stalk lemon grass

3 bay leaf

1/2 c. soy sauce

3-5 pcs. green hot chilli

3/4 c. vinegar

salt and pepper

cooking oil

Cooking procedure:

Marinate kambing in 1/2 c. vinegar, 1 tsp. salt and 1/2 tsp. pepper for 15 to 30 minutes before cooking. Drain and discard marinade. In a frying pan fry kambing in batches until color changes to golden brown and start to sizzle. I a saucepan put in fried kambing, pour in 2-3 c. of water, 1/4 c. vinegar and soy sauce. Add lemon grass, ginger, onion, garlic, peppercorns, bay leaf and chilli. Bring to a boil and simmer in medium heat for 15-30 minutes or until tender and liquid is reduced to almost dry. Serve hot with a lot of rice.

WOW finally I found this one..thanks ..glad i read this topic......I went to mountain province north of cebu last Sept 2008 , for there fiesta suddenly I meet this kambing on my way home, and i said it is so cute, then the owner heard me and say , she will glad to give it to me as a gift... :dance::dance: WOW ...so i accept it, i bring kambing back home, it is so difficult , I went tru motorbike ride (habal2x) for 30 minutes then bus for 2 hours, but it is worthy , then last February my brother passed his nursing board exam(thanks to GOD) then we decided to cook kambing for celebration, and we do not know how :whistle: ...so thank you again ...

hhhmmmm im getting hungry reading this topic hahahaha, my husband getting big for eating all my recipe's try my chiken pork adobo everybody love's this even my huband's family:

chicken and pork

olive oil

onions

garlic

vinegar

soy sauce

broth cubes

little bit of ginger powder

little bit of sugar

black pepper

little bit of catsup

use (hinugasan ng bigas na tubig) to make the meat tender instead of water

Saute the garlic and onion in olive oil, put the chix & pork and the broth cubes cover it for 1 min. stir add the soy sauce wait until it dissolve, then add the water from rice and wait until the meat little bit tender add the vinegar sprinkle with ginger powder,black pepper and little bit of sugar stir and cover bring to boil, I'm using soy sauce instead of salt and then the last put some catsup to make the sauce thicker, if you want some drama you can add hard boiled egg to it, pure homemade!!!

Just proportion some of the ingredients it depends on the amount of your chix & pork.... :thumbs:

There are many Filipino recipes that you can find from the different websites. I'd like to share one of the recipes which I only learned and cooked here in US. :P

Chicken Curry Recipe (Filipino Style)

Ingredients :

• 2-3 tbsp. oil

• 3 potatoes, peeled, quartered and fried

• 1 lb. chicken, cut into serving pieces

• 3 cloves garlic, minced

• 1 large onion, quartered

• 1 tbsp. patis (fish sauce) ( In lieu of patis, I used fish broth cube.)

• 3 tbsp. curry powder

• salt and pepper

• 1 cup water

• 1 red bell pepper, cut into big squares

• 1 green bell pepper, cut into big squares

• 3 celery stalks, cut into 1-1/2" long

• 1 cup coconut milk or evaporated milk

Cooking Procedures :

1. Pan fry potatoes. Set aside.

2. In the same pan, fry chicken pieces and brown a little.

3. Add garlic and onion. Sauté for a few minutes until soft.

4. Pour in patis and season with curry powder, salt and pepper. Stir for 2 minutes.

5. Add water. Cover and bring to a boil. Lower the heat; add celery, bell peppers and fried potatoes. Simmer for 3 minutes or until half done.

6. Add milk and stir occasionally. Cook for another 7 minutes (or lesser when using evaporated milk because the liquids will curled).

7. Remove from heat. Serve hot.

Ginisang Baboy with Calabasa

Ingredients :

1 whole acorn squash, sliced and seeded

1 tbsp cooking oil

1/2 lb. pork cut in cubes (also good with chicken)

2 cloves minced garlic

1 chopped red onion

1 tomato, chopped (optional, if you don't really like tomatoes)

2 cups water

2 tbsp patis (fish sauce)

salt and pepper, to taste

chopped scallions for garnishing

Marinate pork with fish sauce and set aside for 30 minutes. Heat pan and add oil. Saute garlic and onions, add the marinaded pork. Cook until slightly brown. Add squash and tomato. Pour water and bring it on a boil. Let it simmer until the squash is tender (or mushy..) Add salt and pepper to taste. Garnish with chopped scallions.

Hubby loves this dish. He always beg me to make this one everytime we ran out of it. Our maid used to make this one back home and she wrote me a little recipe book when I left for the US. Hope you like it!

Try this recipe. I been cooking this few weeks ago and tonight my kids and friends loved it.

Cooking time : 15min.

2 pounds peeled and deveined jumbo shrimp

1 teaspoon garlic salt

2 sticks (8 ounce butter)

2 tomatoes, chopped

8 scallions, chopped

1/2 cup light cream

cayenne pepper( depends how much you want)

In a bowl, comibe the shrimp and garlic salt. In a larhe skillter, melt the butter over medium heat. Add the shrimp and cook, stirring occasionally, until cooked through, about 5 minutes. Transfer the shrimp to a plate. Reserve the skillet. Add the tomatoes, scallions and cream to the skillter and simmer over low heat for 5 minutes. Meanwhile, cut the srimp into bite-size pieces, add to skillter and cook over medium heat, stirring, until heated through. Season with cayenne pepper and serve.
