Hi, everyone!

I have been looking around VJ for different kinds of recipes. I have followed threads about people's favorite native dish or what dish they miss, but nothing dedicated to sharing tried and tested recipes.

Let's share recipes, whether it's something personally created or one that's been handed down through the generations, not something you found online and copied just for the sake of posting here. Please don't post links, that's what Google is for. The point is, it has to be something you have cooked, tried and tested yourself.

Also include your cooking tips so even a novice can recreate the dish. Take for instance, Adobo (probably the easiest and tastiest Filipino dish around), but people have their own versions of how to cook it. So share what makes yours unique.

Disclaimer: I have not seen or found an existing topic like this in the Philippine regional discussion board. If there is an existing one, can someone post me the link please?

Thanks, Mj! I did see a couple of threads on ME/NA recipes. However, I was hoping for something mainly Filipino (or dishes Filipinos cook but are not really Filipino in origin). It seems the Philippine regional discussion board doesn't have one...

My favorite Menudo.. I've cooked this many many many times already and it's different from a typical menudo with tomato sauce.. this one doesnt have a tomato sauce but it's YUMMY!!!... try it!! :-)

MENUDO!!!!

Ingredients

½kg menudo-cut pork (available in most groceries)

1 can potted meat

2 medium-sized potatoes, diced

1 medium-sized carrots, diced

3 to 5 cloves of garlic

I small onion bulb, chopped

3 pieces calamansi (Philippine lemon)

2 slices cheese, diced

2 tbsp soy sauce

a pinch of pepper

salt, as preferred

Procedures

1. Marinate the pork in soy sauce and calamansi (Philippine lemon) for at least 15 minutes and set aside.

2. Dice the potatoes and stir-fry till golden brown. Then dice the carrot and stir-fry for three minutes or less, making sure that the carrots are not overcooked. Set aside potatoes and carrots.

3. Sauté the garlic then add the chopped onion. After caramelizing the onions, add the tomato.

4. Add the marinated pork to the pan. Cover and simmer under low fire until meat is tender.

5. Add the potted meat.

6. While the whole thing simmers and the potted meat dissolves, add the cheese.

7. Add pepper to taste before serving. The whole recipe can serve four people.

Oooh, menudo! Our method's almost similar, but I use tomato sauce... and I never tried marinating the pork with calamansi nor have I tried cooking it with cheese. My husband actually loves it. Since he prefers lean meat, I have been cooking menudo using ground sirloin (quite expensive compared to the pork).

you can use any part of the baboy.. (haha! baboy eh no!).. as long as you put all the ingredients and hey! dont forget the potted meat, this plays a very important role. I always use RENO liverspread if you wanna make it taste a little saltier.. (yung cheap lang, mahirap ako eh! :lol: )..

This is how i pan-fry my fish... Squeeze a few amount of lemon juice. Rub with salt and pepper. Then pan fry.

I like this topic. :) Here's how I cook my pork chops.For fried pork chops,I marinate the meat first lets say overnight with soy sauce (kikkoman),lots of minched garlic, ground black pepper,powdered onions or use the fresh onions,kalamansi and few drops of chili sauce and use flour for coating to make it crunchy/crispy (flour has ground black pepper too and I make sure the oil is really hot before I start frying.My husband loves it ! :rolleyes:

There are many Filipino recipes that you can find from the different websites. I'd like to share one of the recipes which I only learned and cooked here in US. :P

Chicken Curry Recipe (Filipino Style)

Ingredients :

• 1 lb. chicken, cut into serving pieces

• 3 cloves garlic, minced

• 1 large onion, quartered

• 1 tbsp. patis (fish sauce) ( In lieu of patis, I used fish broth cube.)

• 3 tbsp. curry powder

• salt and pepper

• 1 cup water

• 1 red bell pepper, cut into big squares

• 1 green bell pepper, cut into big squares

• 3 celery stalks, cut into 1-1/2” long

• 1 cup coconut milk or evaporated milk

Cooking Procedures :

1. Pan fry potatoes. Set aside.

2. In the same pan, fry chicken pieces and brown a little.

3. Add garlic and onion. Sauté for a few minutes until soft.

4. Pour in patis and season with curry powder, salt and pepper. Stir for 2 minutes.

5. Add water. Cover and bring to a boil. Lower the heat; add celery, bell peppers and fried potatoes. Simmer for 3 minutes or until half done.

6. Add milk and stir occasionally. Cook for another 7 minutes (or lesser when using evaporated milk because the liquids will curled).

7. Remove from heat. Serve hot.

I like this recipe. I normally use red pepper and green pepper for my beef ( a thai recipe). Now i could use my excess red and green pepper for chicken curry (filipino food). Thanks.

Here is my version of adobong kambing. Enjoy!

Ingredients:

1 k. kambing spareribs, cut into serving pieces, bones intact

2 thumb size ginger, sliced

1/2 head garlic, crushed

1 large onion, sliced

1 tsp. peppercorns

2 stalk lemon grass

3 bay leaf

1/2 c. soy sauce

3-5 pcs. green hot chilli

3/4 c. vinegar

salt and pepper

cooking oil

Cooking procedure:

Marinate kambing in 1/2 c. vinegar, 1 tsp. salt and 1/2 tsp. pepper for 15 to 30 minutes before cooking. Drain and discard marinade. In a frying pan fry kambing in batches until color changes to golden brown and start to sizzle. I a saucepan put in fried kambing, pour in 2-3 c. of water, 1/4 c. vinegar and soy sauce. Add lemon grass, ginger, onion, garlic, peppercorns, bay leaf and chilli. Bring to a boil and simmer in medium heat for 15-30 minutes or until tender and liquid is reduced to almost dry. Serve hot with a lot of rice.
