Does any one have a quick & easy feta/spinach borek recipe?

thanks

~awaterlily

Too bad my wife's in Istanbul right now, or I'd ask her. She makes one hell of a borek......not to mention kufde'....mante' (I think that's how you spell it:).....mushwar (not sure how to spell that one either:)..etc...

She's a terrific cook.

The good news is (for me anyhow)........I'll be joining her in just a few days there ....for the summer.

Hope you all have a great summer too.

Well.......I did say she is in Istanbul now, but I guess that's why they invented email. For times like this.

I copied what she wrote below.

________

My wife's recipe - Turkish spinach börek

Sorry she does not use scales so her measurements are approximate....

Ingredients.

- Fillo dough

- Feta cheese

- spinach

- salt

- black peper

- paprika

- onion

- yogurt

- milk

- black sesame seeds

- olive oil

- yolk

1) preheat the oven to 350 C

2) prepare your tray and put some butter around of your tray that it won't stick on it.

3) prepare a mix half scale olive oil, milk and yogurt

4) spread one fillo dough and brush the mix on it and put another fillo dough on it and brush the mix on it.

Keep doing this half way through the tray.

5) In the mean time, in a pan put some olive oil. Roast the choped onion in it. (Considering how onions are huge in USA

use half big onion). Add the chopped spinach in it.

Add some salt, balck pepper and paprika on it.

6) When you are half way in the tray spread the thing you have prepared in the pan.

7) Also add the feta cheese on the spinach mix. You can just spread the feta cheese with your hand into small pieces.

8) continues spreading fillo dough sheets on it by brushing the milk mixes in it.

9) When you reach the top pf the tray prepare a mix with yogurt, olive oile and yolk and spread that onto last

fillo doug and put blac sesame seeds on it.

10) Put your tray into preheated oven and keep there 20 minutes. If you want more browninsh keep more.

Afiyet olsun means bon appettite in Turkish

Hello Everyone!

I've learned how to make kofte!

5-6 cloves of minced garlic (must be fresh)

1/2 cup of chopped parsley (flat-leafed)

1/2 onion, finely chopped

1 lb of extra lean ground beef

2-3 tablespoons of olive oil

1 cup of bread crumbs

1 tablespoon crushed red pepper

1 tablespoon salt

Thoroughly mix everything together by hand in a bowl for 5-10 minutes.

Shape into flat, oval patties about the size of your palm.

Add a little oil into frying pan (preferably non-stick) and cook on low to medium heat,

repeatedly turning every few minutes. This will give the kofte a dark brown color

without burning.

Kofte can also be cooked on bbq grill, on top of a sheet of aluminum foil.

The key is slowly cooking them and turning a lot so that they don't burn.

Afiyet olsun!
