I read on Visa Journey flow chart that sometimes you get the visa the same day as your interview and in other cases it comes a week later. For the interview my fiance will have to go to Juarez, MX which is is very far away from Merida, MX and if my fiance got the visa the day he went to the interview he could just come on from there to the US. Is there any way of planning for this? Will we know ahead of time if he is going to get the visa the same day? If I went to Juarez with him would they allow me to go in with him to the interview?

US citizen is not allowed to attend the interview (based on information in the Embassy Info section here on VJ) - doesn't prevent you from being close by though.

No way to know ahead of time if you'll get the visa at all, much less the same day - that would require a crystal ball.
