I was planning marriage next year and was wanting to bring him here on a fiance visa, but i just read about the sponsorship requirement and i had a question about receiving public benefits..

i am currently an unemployed full time student, when i graduate, very soon, i will be working. As for now, i am receiving government help. Not welfare, but i get assistance with medical and food. I may not be eligible for food assistance once i get hired, if i am only a little, but the medical, well, that i will need help with for quite sometime.

I do have a cosponsor, my mom, and she is willing to join with me to sponsor him and i was wondering if anyone knows if that type of govt assistance will be a hindrance in the immigration process, or a denial?

No it will NOT hinder the process, all they want to know is if the immigrant will be sponsored and supported, and the IMMIGRANT won't go on government assistance (Welfare)

So if your income is insufficient, you will need a joint sponsor who's income is sufficient to support the immigrant.

Moving this to the K-1 forum, since you say fiancee visa. CR-1/IR-1 visa forum is for persons petitioning for a spousal visa and are already married.

OK, MY INCOME WILL NOT BE SUFFICIENT, NOR MY MOM'S ALONE, CAN WE COMBINE OUR INCOME? WELL I BELIEVE THAT SHE DOES MAKE ENOUGH FOR 100 PERCENT...RATIO BUT NOT THE 125? ALSO, IS THERE A DIFFERENCE BETWEEN A CO SPONSOR AND A JOINT SPONSOR? DOES HOUSEHOLD SIZE CHANGE JUST BECAUSE MY MOM HELPS ME MEET THE INCOME REQUIREMENTS, I MEAN RIGHT NOW IT IS 4 BUT WILL I HAVE TO ADD HER TO THE HOUSEHOLD SIZE?

I believe that the total of both incomes must be 125% of the poverty level for the total number of people supported by both incomes. This would include your mother.
