Anyone have some good Cerviche recipes?

My husband loves cerviche and I would like to make some. I did a recipe search on the net and there are so many to choose from. Ideally I would like a recipe that has a mixture of shrimp, white fish, avocado.

Anyone have a tried and true recipe they are willing to share?

I have made this one (sorry, allergic to shrimp - but I assume you could substitute it for the tuna)

Tuna Ceviche with Lime

1/2 pound of super-fresh tuna

2 avocados

2 serrano chiles, seeded and finely chopped

2 tablespoons finely chopped cilantro

1 teaspoon minded red onion

3 tablespoons extra-virgin olive oil

3 tablespoons freshly squeezed lime juice, or to taste

Salt and pepper to taste

Cut the tuna into 1/2 inch dice. Peel and cut the avocado into the same size dice. Place them in a glass

bowl. Add all the other ingredients, tossing them with a rubber spatula until thoroughly mixed. Cover with

plastic wrap and marinate in the refrigerator for at least 1 hour. Taste and add more seasoning if needed.

I went to Whole Foods and got some beautiful seafood- shrimp, scallops and halibut. I have them marinating in fresh squeezed lime now.

I'm gonna add cilantro, onion, avocado, mango, jalapenos, maybe some bell pepper.

I hope it turns out good.
