Timeline

Is it true that after I mail out the applications and forms for the CR-1/IR-1 that my fiancee can no longer enter the United States or go back and forth between Canada and the US?

Trying to decide if we need to plan one more "Rush Trip" down here before we start the process.

As always, I'm grateful for any advice provided.

yes that is true, it happened with us. I wasnt aware but after the process starts u are not able to enter the US and if you are still in the US you need permission to leave so you can then re-enter.

If you are applying for a CR-1/IR-1 visa your fiance would be your "wife". It is a spousal visa. And YES she still can travel to the US while the process is ongoing BUT whether she is allowed to enter is totally at the discretion of the border agent. There are no guarantees, however, it is advisable to bring evidence of strong ties to Canada to show her intent to return. (Employment letter from her employer showing her expected date of return to work, lease/ rental agreements etc.)

If you are applying for a fiance visa the same applies while the process is ongoing. However, once the fiance visa is granted and she enters the US to get married then she cannot leave without her AP (Advanced Parole).

Yeah, you can totally cross! I've been back and forth a TON of times and I just tell the truth, bring some proof that I'm still living in Canada and always a return flight helps in my situation. I've never once been re-questioned or brought in for extra questioning. Definitely go visit! At first I was really nervous, but it's nothing anymore.

At the very beginning, when your dossier just arrived at uscis, nobody knows you applied for a green card, so you can cross with absolutely no problem. However, after a few weeks, I am not sure.
