I've tried to figure out as best I can from the time lines on folks signatures and by talking to some people. Am I correct in guessing that approximately 3 months from when I mail in the last of my paperwork I could expect to be in Montreal for the interview?

Thats about right based on my timeline. Took us about 11 months from beginning to end, which I figure was good. We did not get any RFE's.

Have a look at the Montreal CR1/IR1 timeline to interview, it will give you a very good idea about wait times between NVC and interview.
