Anyone have a simple coq au vin recipe?

ummm...hmmmm...it's not really a simple dish

marinade

carrot, celery, onion, red wine, crushed garlic clove, herbs

mix all together and marinate chicken in this overnight

actual recipe

carrot, celery, onion, chicken, brandy, minced garlic clove, marinade (save it), chicken stock, salt pepper, herbs, bacon, pearl onions, crimini mushrooms, some roux for thickening

render bacon, blanch onions and peel them, saute onions with mushrooms, brown marinated mirepoix (carrot, celery, onion), add garlic, deglaze with brandy and reduce to half, add wine from marinade and reduce by half again, put into a saucepan with stock and herbs

brown chicken, place it in the saucepan, cover, cook at 325 for 30-40 mins

remove chicken, strain sauce, thicken with roux, add bacon onion and mushroom to sauce

you're done
