As far as I know, if you apply for your SSN when your K-1 is about to expire, or when it has already expired, they won't give you one. Now you'll have to wait for your EAD, since you will need a SSN if you look for work. As regards married vs. maiden name, I got my SSN in my married name, and filed for AoS with my married name as well. In any case, I carry copies of both my NOA and marriage certificate in my handbag when I am out, so in the (hopefully unlikely) event of a check, I can prove my status is legal (my passport and visa are obviously in my maiden name).

You can file the AOS papers in your married name- just make sure to put your maiden name where it asks for "other names used". When you receive your EAD, you can take that to the SSA and get your number in your new name. It's not a problem to file in your married name, your marriage certificate is legal proof of your name change.
