Regarding embassies that do administrative processing after the interview before they issue the K-1 visa...do they keep the beneficiary's passport during that time? What if the processing takes more than a week or two and the beneficiary needs his passport before that?

Yes, they keep the passport. They will return it with the visa inside. Do not make any plans where you would need your passport until you get it back IN YOUR HAND and that means travel plans to the USA.

They should return the passport as AP can take ages...They will request once AP has been completed.
