Ingredientes

salsa aji

sal gusto

1 1/2 de pulpa de chancho

pimienta gusto

5 patitas chancho (cerdo)

oregano gusto

4 colitas chancho

2 cabezas ajos

aji color

Preparación

Cocer las patitas de cerdo , colitas de cerdo y la pulpa de cerdo todo en agua con sal, una vez cocidos desmenuzarlos en pedasitos pequeños (la parte tediosa) con mucho cuidado de no cortarse, no votar el agua que quedo, luego incluir todos los trozos aliñados con ajo, oregano, pimienta, ajo triturado en la misma agua del cocimiento, el agua que cubra los trozos de carne finos y recocer por media hora en el caldo luego en fuente amoldarlos y dejar al freeser, ojo que uno lo hice normal y el segundo le incorpore ají en salsa, el reposo duro de un día a otro, fijarse en quitar la grasa que se acumula ya que después no da buena impresión.

Tiempo de preparación: 50 minutos
