They will ask if you desire to have interview in chinese or english..Do you understand chinese?A question asked is proof about communication.

My wife's English wasn't nearly as good as it is now when she had her interview. The interviewer was a man and he started the interview in English. My wife (fiancee at that time) asked if she could please have the interview in Chinese. The man started conducting the interview in Chinese, but my wife said his Chinese wasn't any better than her English. She apologized that she could not understand his Chinese and asked if someone else could help with the interview. They brought in a woman who spoke fluent Chinese to assist with the interview. Everything went smoothly after that. Make sure your fiancee isn't afraid to ask for someone else to assist if she has trouble with someone who isn't a native speaker.

Sounds like the gamut has been covered. The beneficiary should be prepared to explain how the couple communicates. Other wise, the interview can be in English, Mandarin or Cantonese. If there is difficulty communicating with the Consular officer, ask for a translator to help. It will be provided. Language skills vary with the officer but sufficient langauge assitance is available if needed. Ask.

I would teach her to say, in English, "I can speak a little English but I will understand you better if we use Mandarin." A lot of our webcam time was me teaching my wife interview questions and answers in English. She was specifically prepared to smile and greet the Consular officer in English but in her case, he spoke first, in Mandarin and not one word of English was spoken in the interview. You just never know.

Of course, but that's putonghua, not "English". My suggestion was to teach her a specific sentence in English.

The last time I checked speaking English was not required. And while my wife's English was just 'ok' by interview time we had practiced a lot. If your fiance speaks almost no English then I hope you speak Chinese. GUZ is very suspect if the 2 parties don't have clear, direct communications. If she has any doubt at all about what she is being asked then she should ask the VO to ask it again in Chinese.

Best of Luck!
