Hola a todos los Peruanos..... :)

I'm looking for some suggestions ... I am cooking Peruvian food for Luis and it is coming out pretty good! But I am using aji amarillo that is frozen - I can't get the fresh aji amarillo close by. How can I get it so that it's not so hot... Saco todas las venas y las pepas, pero todavia pica demasiado. is that because it's frozen? The fresh aji isn't that hot at all. Any ideas? I tried dipping it in boiling water for a few seconds but it only worked a little.

Necesito consejos! I want to make papa a la huancaina this weekend and don't want to burn the roof of my mouth off :) And I don't want to travel 1 1/2 hours to get fresh aji amarillo when I have 2 bags of it frozen in the freezer.

I know but it's 1 1/2 hrs from my house LOL

We go sometimes :star: I just want to know how to make this frozen aji not be so hot! My husband doesn't know because in Peru they always buy it fresh, maybe we will have to start our own garden & grow it in the spring.

Whenever I have to add aji amarillo molido, it's okay... but when I have to cut it in tiras (like for lomo saltado, etc.) it's too spicy. I have just been using the Peru Food brand aji amarillo molido and not putting it in whole :blush: I know it's not the same but we don't want to burn our mouths off, haha.

BTW the other day I made frijoles con seco (de carne) and Luis said I must have practiced a lot because it came out really really good. Sometimes we go to a Peruvian restaurant, but lately he just wants me to cook because he says it comes out better :star:

The only thing I don't like to cook is the cow's stomach (yuck). My grandmother used to make that and I can't stand the smell. If he wants to eat that he has to go to the restaurant.

I ordered a box of cow hearts from the butcher to make anticuchos for Luis. I figure I will make a bunch & then freeze the rest of the hearts since we have to order 1 week in advance. They don't carry them in the supermarket here.

Just checking in. My wife and stepson had their interviews last week, visas in hand as of Friday, and plane tickets have been organized. Happily hanging up my bachelor hat on 02/15 :)

Just wondering if anyone is going to the festival in New Jersey in July...

I wish I were in NJ :)

We don't have peruvian food neither festivals, there's a latino festival in august where a least I can find some items

we are a small % of peruvians in my city

We usually have to order peruvian food online from another states or drive south in order to buy some peruvian items or find a peruvian restaurant

but we cook peruvian recipes in this house and my husband has learned to eat spiocy food

Please post some pic of the festival if you go, ok??

I definitely will post pictures... we are planning to go to the festival and then the week after is the famous parade in NJ. We're in NY but will make the trip there because it's so fun, it's like a 1 1/2 hr drive.

Speaking of Peruvian food I made anticuchos on Sunday for fathers day.

Hi! I'm not from Peru but fiancee' is in Arequipa (we just got NOA 1 on May5). I live in south central PA. I've enjoyed reading your posts because I have been so worried about things he will miss from home once he is here. I've already found a wonderful Peruvian restaurant and market where we can find some Peruvian foods. I'm even practicing some cooking for him-ha. His favorite dessert is Tres Leche cake. I've been looking for a recipe for it but the ones I've come across dont seem like the ones I've seen in Peru. If anyone has or knows where I can get the recipe for this please let me know.

7/15/2010- E-mailed embassy & got response back- they said to watch for pkt in mail and gave me inteview date
8/16/2010- Interview- need an additional police certificate from Costa Rica :( so not approved today, but once they receive certificate will mail visa :)
8/16/2010-Trip to Costa Rica embassy for help with certificate- Let the games begin
8/17/2010-Trip to Notary, trip to Minister Relacciones Exteriores, trip to Notary collage
8/18/2010-Back to notary collage, back to MRE, back to Costa Rica embassy
8/19/2010-Back to MRE
8/20/2010-Back to Costa Rica embassy- whew,finally, "stamp collection" on paper complete and can now attempt to get actual police certificate needed

I'm from NY, my husband is from Lima. If your fiancee is here for the 2011 Peruvian festival in NJ you guys should come! It's fun fun fun :) The parade is cool too.

Tres Leches cake is on the difficult side but not too hard, and the version I know how to make is Puerto Rican. I've had the tres leches cake in Peru and the only difference I noticed was that I couldn't really taste any leche de coco (in the Puerto Rican version that's usually one of the milks they use). I say give it a shot.

I cook all kinds of Peruvian food among other things. If you need any help with ingredients you can always ask here. I know some of the stuff is hard to find.

07-20-2007 = Phoned Immigration Officer; got WAC#; where's NOA1?

09-25-2007 = Touch (first-ever).

09-28-2007 = NOA1, 23 days after their 45-day promise to send it (grrrr).

10-20 & 11-14-2007 = Phoned ImmOffs; "still pending."

12-11-2007 = 180 days; file is "between workstations, may be early Jan."; touches 12/11 & 12/12.

12-18-2007 = Call; file is with Division 9 ofcr. (bckgrnd check); e-prompt to shake it; touch.

12-19-2007 = NOA2 by e-mail & web, dated 12-18-07 (187 days; 201 per VJ); in mail 12/24/07.

01-09-2008 = File from USCIS to NVC, 1-4-08; NVC creates file, 1/15/08; to consulate 1/16/08.

01-23-2008 = Consulate gets file; outdated Packet 4 mailed to fiancee 1/27/08; rec'd 3/3/08.

04-29-2008 = Fiancee's 4-min. consular interview, 8:30 a.m.; much evidence brought but not allowed to be presented (consul: "More proof! Second interview! Bring your fiance!").

05-05-2008 = Infuriating $12 call to non-English-speaking consulate appointment-setter.

05-06-2008 = Better $12 call to English-speaker; "joint" interview date 6/30/08 (my selection).

06-30-2008 = Stokes Interrogations w/Ecuadorian (not USC); "wait 2 weeks; we'll mail her."

07-2008 = Daily calls to DOS: "currently processing"; 8/05 = Phoned consulate, got Section Chief; wrote him.

08-07-08 = E-mail from consulate, promising to issue visa "as soon as we get her passport" (on 8/12, per DHL).

08-27-08 = Phoned consulate (they "couldn't find" our file); visa DHL'd 8/28; in hand 9/1; through POE on 10/9 with NO hassles(!).
