what do u guys think of this southwest pork soup recipe?

Ingredients

Cooking spray

1 cup prechopped onion

2/3 cup prechopped green bell pepper

1 tablespoon bottled minced garlic

1 jalapeño pepper, seeded and minced

1 pound pork tenderloin, trimmed and cut into bite-sized pieces

2 cups fat-free, less-sodium chicken broth

2 teaspoons chili powder

1 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 (15-ounce) can pink beans, rinsed and drained

1 (14-ounce) can diced tomatoes, undrained

2 tablespoons chopped fresh cilantro

1 cup diced avocado

Preparation

Heat a small nonstick Dutch oven over medium-heat. Coat pan with cooking spray. Add onion, bell pepper, garlic, and jalapeño to pan; sauté for 2 minutes. Add pork; cook 3 minutes. Add broth and next 6 ingredients (through tomatoes); bring to a boil. Partially cover, reduce heat, and simmer 6 minutes or until pork is done, stirring occasionally. Remove from heat, and stir in cilantro. Serve with avocado.

i wouldn't use the avocado, but all the rest sounds interesting

the avocado is the best part.... lol

although I have never had avocado with soup before so I wouldn't know how it would taste.. I have just had it on sandwiches..mmm yummy

someone on the Canada forum posted this recipe the other day.. it looks yummy too...

Mexican Taco Stew

1/2 pound ground beef or turkey

1 medium onion, chopped

2 garlic cloves, finely chopped

2 tablespoons taco seasoning (gluten-free)

2 cups chicken broth*

1 large zucchini or summer squash, cut into small cubes

1 (15-ounce) can black beans*

1 (14.5-ounce) can diced tomatoes*

1 cup frozen corn kernels*

1 cup medium salsa*

Brown meat in a large pot over medium high heat. Drain, remove and set aside. In the same pot, sauté onion and garlic until onion is translucent. Add meat back to pot and sprinkle mixture with taco seasoning to blend. Add remaining ingredients and simmer, covered, stirring occasionally, 15 to 20 minutes.
