Morning to all.

My dear colleague C.S. passed away from her injuries last night. Thanks to all who sent good vibes.

You know what irks me the most about it? Her husband is a doll. They had been married since they went to graduate school in the late 50's or so. Worked together as a team, had a lovely child, were serious partners in their quirky academishy and nerdy way. the though of R.S. being alone is so heartbreaking. So people, today plz be nice to your other halves - nicer. I can't wait to get home and subject Bren to hours of hugging attacks.

And now to write a fvking obituary for the website, the Seattle times, blah blah; cancel courses, communicate with students, re-arrange final examinations, find someone who will grade.... #######. #######. #######. Not even time for grieving.

which beef stew should i make? which one would be more american? :P

Option #3:

Ingredients

4 pounds chuck roast, well trimmed and cut into 2-inch pieces

1 cup all-purpose flour

1/3 cup olive oil (plus more if needed)

2 large onions, diced (2 cups)

1 6-ounce can tomato paste

1 cup dry red wine

1 pound potatoes, cut into 2-inch pieces (about 4 cups)

1/2 pound baby carrots (about 2 cups)

2 cups beef broth

1 tablespoon kosher salt

1 teaspoon dried thyme leaves

1 bay leaf

1 cup frozen peas, thawed

If #1, do i have to use beer? will the taste be that different if i don't?

If option #3: i'm not using red wine. is there anything i can substitute?

#3 Sounds best. Use the wine - it will cook off but leave great flavor. I still use wine in all of my recipes...even sneak a few sips from hubby's glass. :P

I also drink coffee - full strength...it hasn't done anything wrong to me or the baby. I just don't have any other caff during the day except maybe tea. My favorite is a two shot Red Eye Caffe Misto with White Mocha ....delish! Just remember - coffee without caffeine is like sex without the spanking!

Hermanita Len - lamento mucho de tu situacion. (F)
