Option #1:

Ingredients

2 teaspoons vegetable oil

1 pound chuck roast

1 (14-ounce) can low-salt beef broth

1 (12-ounce) bottle beer

1 1/2 cups cubed peeled baking potato

1 cup (1/2-inch) cubed peeled turnips (about 2 medium)

1 cup thinly sliced leek (about 1 large)

1 cup (1/2-inch-thick) slices carrot

3 thyme sprigs

1 bay leaf

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 cup water

2 tablespoons all-purpose flour

1 tablespoon fresh lemon juice

1 teaspoon sugar

1/4 cup chopped fresh parsley

Thyme sprigs (optional)

Option #2:

Ingredients

1 (2 3/4-pound) boneless chuck roast*

1/4 cup all-purpose flour

2 tablespoons vegetable oil

4 cups water

1 tablespoon Worcestershire sauce

2 teaspoons salt

1 teaspoon garlic salt

3/4 teaspoon pepper

1/4 teaspoon ground allspice

2 bay leaves

4 carrots, scraped

2 stalks celery

4 medium-size red potatoes

3 small onions

2 green bell peppers

3 tablespoons all-purpose flour

3 tablespoons water

Option #3:

Ingredients

4 pounds chuck roast, well trimmed and cut into 2-inch pieces

1 cup all-purpose flour

1/3 cup olive oil (plus more if needed)

2 large onions, diced (2 cups)

1 6-ounce can tomato paste

1 cup dry red wine

1 pound potatoes, cut into 2-inch pieces (about 4 cups)

1/2 pound baby carrots (about 2 cups)

2 cups beef broth

1 tablespoon kosher salt

1 teaspoon dried thyme leaves

1 bay leaf

1 cup frozen peas, thawed

If #1, do i have to use beer? will the taste be that different if i don't?

If option #3: i'm not using red wine. is there anything i can substitute?

Why no coffee? I've been drinking my turtles decaf these days.

i did decaf for a while at first, got sick of it. i miss real strong coffee.

nessa you can buy a bottle of red cooking wine which has the same flavor-ish but no alcohol. i would use a bit less salt though because cooking wines can be kinda salty sometimes. also leeks are not american pot roast ingredients so #1 may be out :lol:

Ah, I see. I can't drink coffee I make at home, even if it is decaf. It makes me sick. I can still go to the coffee shop and order a decaf turtle though and it doesn't bother me at all. At $3.50 a pop I don't do that very often. It does give me my coffee fix though when I need it. Of course, it's not like I'm staying away from caffeine anyway. I still drink sweet tea and have the occasional soft drink.

Just couldn't stay my @ss away!

I want comfort food. Someone give me a comfort food recipe with beef that can be done without an oven.

I feel :crying: . Fights with my Mom get to me so badly. This one hit me so badly, I am just going home after work. I even cancelled my portrait photography course for the weekend. She manges to make me feel so bad and guilty.

If you cook it over low heat in one of your le creuset crocks in some wine or something you could make a nice pot roast type thing with beef. Make sure you add acid to make the meat more tender and break down easier. Tomato paste would work. Not sure how much time you want to devote to the cooking. Also you could make beef stroganoff.

I also saw a recipe for something like pasta with prime rub with and tomato and something else in a spicy type sauce. I doubt it would be much help since I don't freaking remember it :lol:

People I'm going to attempt to go shopping! I wonder how long I'll last until I fall asleep :unsure:

I'll make some type of beef in sauce, goulashy/ stroganoffy with fresh tagliatelle. But I'll probably change my mind 150 times while shopping. I have a beautiful Rioja at home I could use for a gravy for a roast. I really crave the chewyness of beef. Either way: Go meat!
