I know ... just having fun. I haven't asked Isa about the cut from Br ... what kind of cut? part of cow? would be used? Maybe the vj butcher shop will be able to help define a similar cut for you.

see what i mean, you people have 12 cuts, we have 20.

US uses a primal cut for the area of beef (12 cuts) ... then broken further down (more cuts). the chart is for primal cut.

If you get to the area of the cut you're looking for, it should be easy to find at the store. If not ... the butcher can be your friend :yes: Bring a picture and describe what you're looking for and how it's cut. Most good butchers will be more than happy to work with you.
