Okay so...as many of you know I work long hours and I forgot that tomorrow I have to make lunch for my in-laws. Lunch is a hard one for me but I was thinking of making soup from scratch.

Can any one suggest any good soup recipes they have had success with over the years? I'm tres desperate.

If you help me I will love you forever.

What about a chicken soup?

Mix chopped onion, carrot, celery, and pepper in a bit of oil - add chicken stock, I then add boneless chicken breasts (if in a hurry), cook till chicken is done - pull chicken out, chop up - add back into the pot, then I add some more veggies - parsnips, carrots, even sweet potatoes, some fresh basil, salt and pepper - slow cook it down -

That with some nice warm rolls would be an easy lunch

Sounds lovely but here is the thing....I'm nothing without step by step directions! :( I will eff it up if I don't have measurements. I'm not a very good cook.

Heres the italian wedding soup recipe, I am winging it here...

2 large cans of chicken broth (low sodium cento if you can find it)

Meatball mix (pork, beef, veal)

Acini de pepe pasta

2 cloves of garlic (chopped)

Escarole (chopped)

Bread crumbs

1 egg

Salt & Pepper

Oregano

Parmesan cheese

To make the meat balls:

Put the meat ball mix in a large bowl

Add 1/3 cup shredded parmesan cheese

Add the garlic

1/4 teaspoon salt

1/4 teaspoon of pepper

Pinch of oregano

1/3 cup of bread crumbs

1 egg

Combine all the ingredients and make small meatballs.

Broth:

Heat up the chicken broth over medium high heat and put the meat balls in, and cook for about 45 minutes. After meatballs are cooked add the escarole and cook for another 5-7 minutes.

The pasta:

1 box of Acini de pepe pasta

I always cook the pasta in a separate pot just because its easier.

When serving it:

Put the pasta into the bowl and add the soup over top. Serve with parmesan cheese, preshredded or you can let your guests shred their own. :)

Some people add carrots and egg, but I don't. Its really up to you.

Sorry I replied again w. the recipe.

You know whats a hit too? If you buy a baguette and cut it up and make an olive oil bread dip along with the soup.

Souper simple, souper good:

PIZZA SOUP

1 tbsp vegetable oil

1 chopped onion

1/2 cup sliced mushrooms

1/4 cup slivered green pepper

1 can 28 oz tomatoes, chopped

1 cup beef stock

1 cup thinly sliced pepperoni

1/2 tsp dried basil

1 cup shredded mozzarella

Stir fry onion, mushrooms, green pepper and oil until soft but not browned. Add tomatoes, stock, pepperoni and basil; cook until heated through.

Ladle soup into 4 ovenproof bowls; sprinkle with cheese. Broil until cheese is melted and golden.

My FIL always puts me down because I don't really cook so I always like to show him I can at least read a recipe. haha #######!

Prove him wrong tomorrow!! (sorry I don't usually make soup, I buy low-sodium canned so don't have a recipe to share). If I do make something from scratch, I usually throw a bunch of stuff into a pot and don't know the recipe!!

Okay I"m late to the party.. but this soup.. amazing.. perhaps you can use it next time..

Leek & Lentil Soup

3 Tbsp Vegetable Oil

2 Very large leeks (white parts plus 1/3 of the green, chopped)

1 Medium onion chopped

1 clove garlic, minced

1 cup dried green lentils

7 cups veggie or chicken stock

2 medium carrots chopped

2 stalks celery, chopped

1 19 oz can diced tomatoes

1 bay leaf, crumbled

2 tsp fine herbs

1/2 cup fresh parsley, chopped

salt & pepper to taste

In a soup pot, saute leeks, onion and garlic in oil over medium heat until tender, about 5 minutes

Wash and drain lentils. Add lentils and stock to soup pot. Bring to a boil, reduce heat, cover and simmer for 45 minutes.

Add carrots, celery, tomatoes, bay leaf, herbs, salt and pepper and simmer for 30 minutes more or until vegetables are tender.

Add parsley and simmer another 5 minutes. Taste and adjust seasonings.
