Timeline

This is not hard to do, you will respond to NVC when they send out the I-864 Bill, and Visa fees. Keep the I-130 moving through NVC.

The K-3 can be postponed at the consulate by delaying response to packets, or requesting interview to be rescheduled.

Once CR-1 reaches the consulate, they will drop the K-3 in favor of the CR-1.

my wife has applied for my k3 visa... but she wants to change it to a cr1 visa... how can she do this? we are in the middle of the immigration process..

Your wife has applied for nothing. She has filed two petitions with your as beneficiary. The first one, I-130 if pursued would result in you applying for the CR1 visa. The sencond, I-129F for spouse would result in you applying for the K3 visa. If it is your joint choice to follow the CR1 path, simply do so and refrain from applying for a K3 visa when given the opportunity.
