she will need to submit an I-765 either separately or with the I-485

NO, if you look at the evidence requirements of the applications, you lack some of the required documents because she IS NOT here in the USA yet....

after she gets her approval and subsequent visa and enters the US. You can file the 485(adjustment of status) which includes the application for a work permit(EAD), or you can file for the EAD seperatly before filing for AOS.
