You may want to call Manila Embassy at 528-6300 ext. 5184 to request that your wife's packet be sent to St. Lukes Hospital so she could pick it up there the next day.

Although the checklist is specific to K applicants, I'm sure that the requirements would be the same for CR, more or less.

What forms will she pick up from the hospital? I already have to DS-230 and I-864 done, she has her supporting paperwork ie birth certificate, tax records ect ect.

Also as far as the Police certificates, she doesn't have one from korea...and on the us website that list how to get the certificates, it states on there that there is no way to get a certificate for people out of the country. Will this be a problem?

The most important document inside the packet is the appointment letter for your wife's interview date. She won't be allowed to enter the embassy without the appointment letter.

You might want to send PM to Shortie81 to ask him the supporting paperwork for CR-1. His wife just had an interview last week.

I've read of people here on VJ who said that if police certificates cannot be obtained from certain countries, that the embassy did not insist on it. However, make sure your wife prints the list off the US website that shows Korea as one of those countries so she can show it to the interviewing officer in case he insists.
