I am getting together evidence for the i-134, as my fiance should be receiving packet 3 any day now.

I make a little over the 125% but my dad has still agreed to sponsor us :)

I am going to fill out one i-134 and my dad another....2 problems though.

I read to have as much evidence as possible.... I got my dad's last 3/4 pay stubs from his work but he actually burns all of his pay stubs.....don't ask why. he is just super private like that! I know he shouldn't do that...but anyway.... should his last 3/4 pay stubs suffice? I know we should have as much as possible but I have letters from our bank about his deposits for all of last year, when he opened his accounts (1970s!!), his currents balances for his checking and savings and that his accounts are in excellent order. i also have a letter from his employer with his current salary, he works full time and has a excellent future at his company...also what his title is there (signed by the owner/manager of the business).

another problem...i started this job i am at now in september 08'.....problem is is that for some reason our company didn't put me on the payroll until this month! so my boss/president of the company was writing me checks....

these were all tax free (for now!)...and he is going to file a odd tax form for the checks he cut me...so in the end i will have to pay big bucks in taxes...fine whatever. my problem is....is i have NO pay stubs. I have requested that one of my other bosses gives me a w-2 of what i have earned to date...as evidence of employment/payment. would this be okay? i don't think i have to worry a lot because my father is the co-sponsor and makes enough money to support. i also had the president sign a letter with current salary, perminent employment, being full time.

will i have any problems with support not having sufficent pay stubs on both ends?

Three or four pay stubs will be plenty if they show year to date earnings but make them as close to the interview as possible. If your father wants to burn his pay stubs, that's fine. There's no "shouldn't" attached to burning them or "should" attached to keeping them. It's a personal choice.
